Get ready for backyard bbqs and cookouts with this easy and delicious canning recipe for Boston Baked beans! This video is a part of March Canning Madness! An open collaboration hosted by Constance at @CosmopolitanCornbread sharing canning videos in the month of March! This recipe is so easy but so delicious and a great side dish for anytime! I hope you make this recipe!
Cover 1 lb navy beans with 2 inches. Bring to a boil and let sit for 1 hour
Drain then put back in pan and cover with 2 more inches of water.
Bring to a boil and simmer until the skins just start splitting. Drain and reserve the liquid. Put drained beans in a baking dish. Add 4 large onions sliced 1/4 inches to beans. Add 1/2 lb salt pork cut into 1/2 inch strips and add to beans and onions
Mix 2/3 c brown sugar, 2 tsp salt, 2 tsp dry mustard and 2/3 cup molasses with 4 cups of the reserved bean liquid
Cover baking dish with foil and bake for 3 1/2 hours adding water if needed to keep the beans soupy
After 3 1/2 hours can the beans
1 in head space
1 hr 20 min for pints 1 hr 35 minutes for quarts

Hi Ann, :) This is the first video I have seen where you bake something in the oven and then can it. I love baked beans, so I will be trying this one and will make a double batch so that I can eat one and still have one to can. Hope you have a wonderful Easter!

I know! I use ball lids all the time, and I’ve never had that happen before.. But the good thing is I can eat them now I’m currently eating them for lunch as we speak. Lol.
I tried this recipe when I started pressure canning. Mine turned out dry mush before I even got to canning them so i didn't. 😝
Mine were a little bit dry. I think next time I’m gonna cover the beans with more liquid
