You have tons of quick and accessible recipes on your channel so I really appreciate a more complex and special recipe like this.

it's horific, a crime against cooking :) more seriously, that is not how you get the best of a white truffle, at all, it's best eaten with fresh tagliolinni, butter, some salt, no cheese, no pepper, nothing, and certainly not in combination with some kind of inferior black truffle, or ricotta, or anything like that, and the caramelle would be better without that truffled salt, and that awful truffle powder, almost everything in this vidéo is wrong, except the technique of making the pasta that is spot on

I like to [very] finely grate the truffle into melted SALTED [yep salted] butter, thoroughly warmed but not browned, and let it bloom into the warm butter for 10 or 15 minutes. imo that gives the most flavour, and the most approachable texture - those big flakes of shaved truffle can be off-putting to some people.

@@nitraM321 It's an italian recipe.the truffle is put on top at the end of cooking, it is not cooked together, the truffle goes well with many things, it can also be put if you make eggs. You can also easily find the recipe on Italian channels of youtube.
great vidéo again, some little details: don't use eggs contaminated by a piece of the egg shell, that is where the salmonella is, caramelle are not the best pasta for truffle, the simpler the better, the traditional pasta is tagliolini, a narrow thicker version of tagliatelle, made with extra egg yolk, make some truffle butter for the sauce, that is it, any other ingredient, like ricotta is just going to dilute the taste of the truffle, caramelle are nice, i would make them with gorgonzola and nuts, ricotta is not strong enough and is better used in thin ravioli's, with spinach, all those pasta shapes and combinations are not random but the result of centuries of evolution, i would also NEVER use a mix of black and white truffles in a dish, what are burgundy truffles anyway ? are they tuber melanosporum ? if yes, call them black truffle, if not, don't use them :) only estivum and melanosporum are good, note that i have been making pasta for 40 years ;-) oh and THE bigggest mistake is to use that special salt and that truffle powder !!, you have the REAL THING !, don't spoil it !

I doubt he’s going to make a habit of it! This is something he wants to gift to his family for Christmas dinner, a very special event in his world. Maybe some people will do the same and be appreciative of this wonderful pasta- - and of course you can have it without truffles. Look through his vids- he has all sorts of things including coleslaw and sand “wedges” ;) Not everything is this high-end. He has a diverse repertoire.
Big fan here, I'm from Piedmont, the land of white truffle. Never ever again grate the white on a pasta containing truffle powder or other truffles in the filling. It's real blasphemy. You are wasting hundreads of dollars. The white goes alone on very neutral food like raw handminced meat, simple fresh pasta with butter or fried egg.
Over the top for the average individual to pay for good quality truffles to this extent... Especially as many people don't even like truffles (you have to know who you are serving this too....) Also, cheaper truffles can smell like a donkeys' un-brushed teeth... The video looks cute but a bit needy. I would cook this for myself... and perhaps for a good friend. Wife hates them. Grown up kids hate them... except the oldest when in a rich risotto. Truffles are an overrated fad right not... and some of the quality is absolute garbage.
These are exactly the recipes and videos my grown sons and I look for, when we choose our special holiday dinner. We always look for things we have never made, and make memories, not just in the cooking prep, but in the memorable, delicious meals. I greatly appreciate these videos. Let's say that most of the dishes are not everyday dishes, like all special dishes that require a certain processing. If you want to make something quick, you can also make a plate of “Spaghetti Aglio e Olio” (and even in its simplicity, you still eat a “special dish”).
A truffle that's worth more than a lot of peoples monthly salary... Sorry to see you failed your grounded italian style vibe with this one, looks like you lost it in exchange for some advertisement for some random truffle dealer... but maybe some people like it this way. You obviously missed the point of this video. In 6 years and 400 videos I’ve used real truffles like this once. I’m allowed to share what I intend on feeding my family this year and I have a literal books worth of holiday recipes that don’t require truffles. And these are Italian truffles served traditionally in Italy this time of year so I’m having trouble wrapping my head around the issue
