    Can't argue with that choice at the end Naoto, Ryusen nakiris are stunning, I would love to add one to the collection myself. A little surprised you didn't swap out one of the gyutos for a petty, but the lineup you did select was awesome, nicely done.

    I was looking at mainstream Miyabi's until I stumbled into a rabbit hole. Incredible craftsmanship.
    Excited for my Yu Kurosaki Sasame Gyuto 210mm to arrive!

    Anything Toru Tamura and Naohito Myojin do together is going to be pretty awesome. Cannot wait for my Tetsujin 240 Metal Flow to get here from Japan.

    Yoshikazu Tanaka's Blue #1 is the best in the business with the possible exception of Togashi's water quenched Blue #1 Honyakis which are over $2,000. His white #1 and white #2 are excellent as well though. He's my current favorite double bevel maker out there, and Sakai Kikumori has been offering his blacksmithing skill with more heavily convexed mid weight and work horse grinds vs what you'd normally get from a Konosuke Fujiyama, Gesshin Kagekiyo or especially Takada no Hamono. Mazaki's suminagashi is on my bucket list of knives but at that price point there's definitely a few other Honyakis that I need to collect first.

    Great looking line up Naoto and I am interested to see what else will be coming this year. I recall Masashi is stopping two lines but will have something new?

      Thanks Grant! That's correct, he's discontinued the Koi and Kemuri, but we'll have two new lines soon!

    I am a huge fan of Mazaki. I have a 240 gyuto of his in white #2 and it is so nice to cut food with and so fun to sharpen. I love cooking and I love sharpening. If I had the dough I’d definitely look at buying one of his Damascus knives. I am in the market for a Nakiri these days. I have been eyeing the Ryusen knife too. I do a lot of wood working and that curly maple is such a beautiful grain.

    I feel like double bevel westernized kiritsuke has been more and more popular for home cooks. Would love to hear about your recs for that. On top of that sub 20 cm knives are very popular with men with smaller hands and women. (again home cooks)

      They sure have been! The style is very attractive, and a lot of folks are starting to move towardsaking sliding cuts with knives that have flatter edges

    I bought a really cheap Japanese knife like 10 years ago at an Asian grocery store and is the best knife I had owned, but my
    Nephew used to cut a coconut and messed up the blade pretty bad I wish I can find it and buy it again but I don’t know how to read the markings

    I’m looking for my first Japanese carbon steel knife. I have Wüsthof’s Classic Ikon Chefs, Santoku and Nakiri knives and I love them….but it’s time for carbon steel. Any suggestions? I’m thinking Gyuto or Kiritsuke

      His knives are incredible! They're super hard and hold an edge like crazy. They're a joy to use. Their finish is more.rustic, so if you're looking for superb fit and finish I might look elsewhere, but if you want an incredible hand forged knife, you won't be disappointed by Fujiwara.

    I use global. Easy to clean, easy to sharpen and very reasonably priced. Good steel and rust proof.

      @@KnifewearKnives Well I'm not sure as it's really a near perfect knife lol.. perhaps something even sharper if that's even possible.. I've just had it for a while.. looking for something new..I also own, Sakai Takayuki Kasumi, Tojiro etc.. but the Miyabi's are my favourite.. the quality and sharpness.. truly a work of art.. though they all are really.. was thinking maybe a Yaxell super gou maybe or Masamoto KS.. not sure.. Yaxell is very similar in quality to the Miyabi.. has to hold it's edge very well, extremely comfortable in the hand, extremely sharp and look great.. the Birchwood has all that.. the selection In your video is great i may consider one of those.. my preference is a Santoku over a Gyuto..

    Hello teacher. Excuse me, I'm thinking about buying a set of knives, and I'm between: Henzen, Xinzuo or Turwho. Any of the 3 brands are from the same line, that of Damascus. Which of the 3 brands is better?

    Whats the difference between Senko and Tsuchime?

      Good question! Tsuchime is a more general term for a hammered finish, Senko is a particular design created by Kurosaki San, the word means flash!

      @@KnifewearKnives Oh I see, it's Kurosaki San's own form of tsuchime design, hammered with his own stamp and pattern, but all in all-in general, it's still tsuchime, but he calls it Senko. Hope I got that right 🤣 I'm new to the Japanese knife world 🤷‍♂ So much to learn, it's crazy, but it's actually simpler than I thought
