11:11 Naoto's Personal Pick
Can't argue with that choice at the end Naoto, Ryusen nakiris are stunning, I would love to add one to the collection myself. A little surprised you didn't swap out one of the gyutos for a petty, but the lineup you did select was awesome, nicely done.
Some of these I would buy for the handle alone. Very nice set overall.
I was looking at mainstream Miyabi's until I stumbled into a rabbit hole. Incredible craftsmanship.
Excited for my Yu Kurosaki Sasame Gyuto 210mm to arrive!
That's awesome, you're gonna love it!
I have that nakiri... Beautiful knife!
Always good to see Naoto
Nice presentation and thanks for mentioning the prices.
Of course!
Anything Toru Tamura and Naohito Myojin do together is going to be pretty awesome. Cannot wait for my Tetsujin 240 Metal Flow to get here from Japan.
Agreed! We can't wait to get more in stock!
Yoshikazu Tanaka's Blue #1 is the best in the business with the possible exception of Togashi's water quenched Blue #1 Honyakis which are over $2,000. His white #1 and white #2 are excellent as well though. He's my current favorite double bevel maker out there, and Sakai Kikumori has been offering his blacksmithing skill with more heavily convexed mid weight and work horse grinds vs what you'd normally get from a Konosuke Fujiyama, Gesshin Kagekiyo or especially Takada no Hamono. Mazaki's suminagashi is on my bucket list of knives but at that price point there's definitely a few other Honyakis that I need to collect first.
This guy reminds me of Stevie from East Bound and Down. Love it.
Actually getting that nakiri tomorrow ☺️
NICE!
I agree...I SHOULD have all those knives too.....😀
I wait for my Kurosaki 210mm gyuto to arrive in the mail. This will be my first Japanese knife!
That's awesome! Welcome to the club!
@@KnifewearKnives It's awesome!
Great looking line up Naoto and I am interested to see what else will be coming this year. I recall Masashi is stopping two lines but will have something new?
Thanks Grant! That's correct, he's discontinued the Koi and Kemuri, but we'll have two new lines soon!
@@KnifewearKnives I can’t wait to see what steel and design he has coming!
Masamoto KS is hard to beat.
I am a huge fan of Mazaki. I have a 240 gyuto of his in white #2 and it is so nice to cut food with and so fun to sharpen. I love cooking and I love sharpening. If I had the dough I’d definitely look at buying one of his Damascus knives. I am in the market for a Nakiri these days. I have been eyeing the Ryusen knife too. I do a lot of wood working and that curly maple is such a beautiful grain.
We love Mazaki-sans work, we can't wait to get more! Those Ryusen blades are absolutely stunning as well.
I have been trying to track down the
Kawamura Houchou Manufactory's Sanjo Yoshimune Tsuchime Santoku Knife The Niigata Prefecture, looks to be sold out
Sir, may i know which one is your favorite? Long machi (heel blade) or short machi? And may i know the reason why?
Me encanto
I feel like double bevel westernized kiritsuke has been more and more popular for home cooks. Would love to hear about your recs for that. On top of that sub 20 cm knives are very popular with men with smaller hands and women. (again home cooks)
They sure have been! The style is very attractive, and a lot of folks are starting to move towardsaking sliding cuts with knives that have flatter edges
Looks like I need to get myself a gyuto. Will probably start with a $60 model tho lol. Mazaki when I hit the lottery.
I really need a de ba
We have a ton of great options here!
knifewear.com/collections/deba
Sir you have the Kamikoto knives?
I bought a really cheap Japanese knife like 10 years ago at an Asian grocery store and is the best knife I had owned, but my
Nephew used to cut a coconut and messed up the blade pretty bad I wish I can find it and buy it again but I don’t know how to read the markings
Nakiris every time for me and Santoku all I need for my work except a good serrated veg knife
Gotta update your caption - says 2021 ;) Great choices.
Thank you! Apparently my brain is a year behind 😂
@@KnifewearKnives Oh that's more than fair! Mine is still waiting for 2020 to play out differently. I can't even handle the beauty of the Mazaki Aogami Damascus 240mm Gyuto. Sheeeesh. One day.
I'd definitely buy that last but says sold out 😢
Do you have any suggestions of any sujihiki around 100 or less for beginner chefs on a budget?
Totally, this guy is awesome! knifewear.com/products/sakai-takayuki-sk4-sujihiki-210mm?variant=43233644544174
I’m looking for my first Japanese carbon steel knife. I have Wüsthof’s Classic Ikon Chefs, Santoku and Nakiri knives and I love them….but it’s time for carbon steel. Any suggestions? I’m thinking Gyuto or Kiritsuke
Hey, my first carbon steel knife was a Moritaka Ishime gyuto, they're incredible! knifewear.com/products/moritaka-ishime-gyuto-240mm?variant=39295420006574
Extreeeeeeme….
Hello you have very nice content,
What are your thoughts on
FUJIWARA MABOROSHI SUJIHIKI 270MM.
Or Fujiwara in general?
Please and thank you
His knives are incredible! They're super hard and hold an edge like crazy. They're a joy to use. Their finish is more.rustic, so if you're looking for superb fit and finish I might look elsewhere, but if you want an incredible hand forged knife, you won't be disappointed by Fujiwara.
Thank you
The video I needed to convince my self to buy another knife
I use global. Easy to clean, easy to sharpen and very reasonably priced. Good steel and rust proof.
Takamura R2 did not make the cut?
Nice shirt! Where can I get one of those?

I was looking for an upgrade to my Miyabi 5000MCD.. just haven't found many knives to upgrade it to..
What are you looking for in an upgrade?
@@KnifewearKnives Well I'm not sure as it's really a near perfect knife lol.. perhaps something even sharper if that's even possible.. I've just had it for a while.. looking for something new..I also own, Sakai Takayuki Kasumi, Tojiro etc.. but the Miyabi's are my favourite.. the quality and sharpness.. truly a work of art.. though they all are really.. was thinking maybe a Yaxell super gou maybe or Masamoto KS.. not sure.. Yaxell is very similar in quality to the Miyabi.. has to hold it's edge very well, extremely comfortable in the hand, extremely sharp and look great.. the Birchwood has all that.. the selection In your video is great i may consider one of those.. my preference is a Santoku over a Gyuto..
Hello teacher. Excuse me, I'm thinking about buying a set of knives, and I'm between: Henzen, Xinzuo or Turwho. Any of the 3 brands are from the same line, that of Damascus. Which of the 3 brands is better?
Hey, my apologies, I'm actually not familiar with those. We do have some great damascus blades here:
knifewear.com/collections/haruyuki
Those are of chinese makers . Names don’t sound like Japanese.
what? a list without global or shun?
jk, love japanese knives, just bought a yu kurosaki raijin petty, loving the craftsmanship
😂
that's awesome!
👏👏
the knife at 8:05 is the Kurosaki, not the Tanaka. Just a heads-up :)
Thank you! Our editor must have slipped it in by mistake.
Whats the difference between Senko and Tsuchime?
Good question! Tsuchime is a more general term for a hammered finish, Senko is a particular design created by Kurosaki San, the word means flash!
@@KnifewearKnives Oh I see, it's Kurosaki San's own form of tsuchime design, hammered with his own stamp and pattern, but all in all-in general, it's still tsuchime, but he calls it Senko. Hope I got that right 🤣 I'm new to the Japanese knife world 🤷♂ So much to learn, it's crazy, but it's actually simpler than I thought
Which is bet for meat though?
Ok, I’m a Moritaka fan and I just need to know……where can I get a Moritaka T shirt?
We did a limited run of them, we may do more in future!
@@KnifewearKnives Oh please and thank you?!
😃👍
Does Kurosaki San make honesuki????
He does make the Masakage Shimo honesuki! knifewear.com/products/masakage-shimo-honesuki-150mm?variant=21133705540
How often do they come back into stock??? Any chance of finding one in the senko line
I liked the video a lot, much interesting information. However, that really isn't what the word "ESSENTIAL" means.
Oopsie, the title says 2021…
Apparently I'm a year behind 😂
Can knives be delivered in India?
We ship worldwide from knifewear.com! Unfortunately import duties may be expensive in India.
The steel delamination at 00:38 second. Geez...
$2600 bux is freaking nuts 🤦♂ lol

How come all of a sudden everyone jumps on the Ryusen fan wagon ?
We're big fans, they make really great knives!
Is that a Moritaka shirt I see? Lol. I can’t believe not even one Moritaka made it.
It is! I dunno how we missed Moritaka 🤦
Promotion video
$2k for a knife is a bit too much. I will stick to my Misono
Nakiri will be my favorite, sexy looking tho🤘
Nice video except the annoying background music...
Sadly they're all very expensive...
what drugs do you take 😂
what a weird way of displays on the background. too much distracting for me to appreciate.
Funny Guy.🤡
