You don't lock the chickens into little cages like at some of those indoor chicken coops, the way you scratch the pig's head. Thanks for making the animals more comfortable
It's called instinct. You've got to work hard even with a pet potbelly before you can pet it on the head or lift if off the ground. They know they're not predators and that the only defense they have is the loudest P.A. system you've ever heard (don't try lifting a piglet without ear protection).

You need to learn more about what you talk about... As one of the other comments here points out. Those are happy pigs that are well kept. I have personal knowledge from being in a factory pig operation a few times that I guarantee you should have before making every farmer sound like a monster. Those pigs shouldn't know they are going to be slaughtered if raised right and killed efficiently. Go to some actual farms, spend some time and learn, it'll be good for ya.
I love Tamworth. They are such an even tempered pig and so easy to deal with. Not monstrous like the Berks
