I have business in Bangladesh and often visit there. Whenever I visit Dhaka, Kacchi is always on my plate. I found this amazing dish back in 2014 on my 2nd visit to Dhaka. Once my business partner, Ashraf came to India and I took him to a Hyderabadi biryani restaurant in Haryana. After eating the biriyani he was not impressed at all and told me he has better biryani in his hometown. At first I was not ready to believe that something can be more delicious than Hyderabadi biryani but when I met kacchi in Dhaka for the first time, I had no doubt why this is so special and Ashraf was totally right about the taste. Since then kacchi is my most favorite biryani. I tried kacchi in Kolkata too but they don't have the special rice that Dhaka people use. If something can beat our Hyderabadi biryani, that is Dhaka kacchi. ❤ from 🇮🇳

KACCHI, This is what I was waiting for and this is what I was talking about since Mark published his first Bangladeshi vlog. Let me share my story. As far as I remember, in 1998, I met the former Bangladesh high commissioner Mr. Tariq at a dinner in Johannesburg. We were discussing about South Asian foods and particularly Biriyanis. Knowing about my fascination, Mr Tariq suggested me to visit Bangladesh once and try the Kacchi Biriyani. He promised that, I would remember the taste for rest of my life. Well, I went to Dhaka in December 2001 and was invited to a wedding. My gosh, the rest was a history. I met Kacchi biriyani for the first time in my life and I was in so much love with that, during my 16 days stay in that country I had Kacchi almost everyday. I tried biriyanis all over the subcontinent but Dhaka has the most unique taste that nobody has. They use some sort of secret masala and the type of rice is so unique which is not available in Pakistani or Indian biryani. I used to think Basmati is the most exotic rice but since I ate those tiny aromatic rice (Kilzara rice) in Kacchi, Basmati is nothing close to that aroma. However, this is totally my personal opinion but I would tag Kacchi the best biriyani in the world. Since I came to know about Kacchi 24 years ago, I'm still fascinated about it and can't wait to visit Bangladesh soon to try that most amazing dish, KACCHI again. I used to work in Dhaka and first time I tasted kacchi byriani, it was honestly like falling in love. I came back to UK and have been searching for the same taste. Everything is a weak imitation. Finally I have decided I’m going to have to try and cook it myself so this video is so perfectly timed. Hope it doesn’t take me 30 years to perfect. Thanks
People all over the world are misinformed about biryani ! Biryani has many variations.The traditional kacchi biryani of old Dhaka in Bangladesh tastes and bears no relation to the so-called fake Pakistani or Indian biryani. Basically the taste of our Biryani will never match the taste of Biryani of any other country and even if you want you can't prepare them in your country because all the ingredients required are grown only in our country.

Been to Dhaka twice in my life and till now, the one dish that makes me want to go back is the amazing Kacchi Biryani. I had mine at a popular street restaurant not as classy as this one but man, the flavors just blows you away every single time. Thanks Mark for transporting me back to Dhaka!

There are only 2 Kacchi biryani types in the world one is Bangladesh Kacchi biryani & another one is Hyderabadi kacchi biryani both have nizams influences, I had both the biryanis several times, both are Kacchi type biryani but the ingredients what they use in Bangladeshi Kacchi biryani it's impossible in Hyderabadi restaurants and can't even come close to the taste of Bangladeshis Kacchi biryani it is the richest biryani in the world & for the info I'm from South india I have tried almost all the biryanis like Awadhi, Pakistani, malabar, arcot, dindugal, chettinad biryani too, but Dhaka Kacchi biryani is best in the world and my next favourite is our aromatic Tamilnadu wedding function mutton dum biryani cooked with wood fire and we too use a small style rice similar to kalijira rice called jeeraga samba in Tamilnadu or jeerakashala in kerala it will be heavenly👍👍👍
Darknight Yes there is a LOT of truth in your comment. East Bengal which is bangladesh stays true to the roots of biryani. Calcutta is also good (in fact lot of bangladeshis migrated from Calcutta), and Lucknow, Awadh and Hyderabad come as second. You might think i'm just another biased Bangladeshi but i didnt have this opinion i thought Hyderabad and Karachi biryani were superior. I didn't know how rich and authentic Dhaka kacchi biryani is until i tried various biryanis in north India, and various Pakistani and Indian biryani in Middle East and North America. Unfortunately you don't find these briyani kaarigars abroad, the few Bangladeshi restaurateurs in the west don't know this at all.
Darknight one correction is there was no Nizam in Bengal. East Bengal was the seat of the Bengal Nawab. And also the amount of historical Muslim legacy is not known by many can also be found here even though the Muslims suffered and went downhill after Siraj uddaulah's defeat at Plassey. Tipu sultan's family for example was exiled to Bengal. And even direct descendents of Babar through Bahadhur Shah Zafar settled in Bengal where they still live. All that just might explain why certain foods have stayed authentic unlike other parts of the subcontinent
Bangladeshi BIRIYANI, SWEETS and LASSI are the kings of all South Asian biriyani, sweets and lassi. I visited Dhaka twice. One more not to forget, Bangladeshis are the king of fish curry making in South Asian countries.

Tradition Bangladeshi kacchi are prepared with fresh meat and chinigura rice ❤️. Many restaurants offer kacchi biriyani with Basmati rice. Basmati is not our grain varient. Usually Pakistani and Indian traditional biriyani are prepared with Basmati varient. Bangladeshi traditional Kacchi and all kinds of biriyani are prepared with Chinigura or Small kindda aromatic rice grains. This is why bangladeshi Biriyani smells and tastes divine 😍
@@JahidulIslam yes kalijira rice also use for biriyani that's why i mentioned small grained rice 😊 but its not avaiable everywhere. Commonly chinigura varient is uses as biriyani rice.
@@Neel71 People don't cultivate this rice much now. Even if some of them cultivate, they usually keep it themselves or relatives. Production is much less than compared to Chiniguara rice. I used to eat Kalijira rice (mainly polau) almost every week in childhood. My father sourced Kalijira rice and sold in his shop. I think after 2003 or later it became less common.

Wow.. I'm from Karachi, Pakistan, and Biryani is the most famous dish here, but I've never seen Biryani made like this, must taste heavenly, brings water in my mouth.
When I visited Bangladesh, I tried many dishes but Kachchi is the one that stuck with me and my favourite. I remember I ate this at least once or twice a week and put on quite a lot in a short period 😄. The taste is so unique and the aroma makes your mouth water. I feel my craving for Kachchi rising up as I type this! Lol
Honestly, I was impressed with the whole process. Until today, I had thought of biryani as simply rice and mutton. After watching this video, I put biriyani in a category of food all by itself.. I can't wait to try it oneday

Dhaka Kacchi will simply knock off rest of the biryanis in the Indian subcontinent. Tried this biryani in 2009 and no doubt this is the king of all biryanis in the world. The taste, aroma, and look everything is so tempting. I would love to visit Bangladesh thousand times only for this dish.
Have you tried the malabar dum biryani ... Everyone would say their biriyani is best .. for me nothing will come close to malabar dum biryani made by my mom.

INDIAN BIRIYANY NOWHERE NEAR BD BIRIYANI: I am a Non-resident Indian. I have visited many places in India, and I also have an opportunity to be in Dhaka twice. I had opportunities to eat both Indian and Bangladeshi biriyani. In context to the taste and aroma, Indian biriyani are nowhere near to what I ate in Dhaka. The three best South Asian food which I miss are BD BIRIYANI, SWEETS and LASSI. I never had lassi in India, after once tasted bad. Kerala biriyani are yaaki.
Yes because Indian biryani uses too much chili powder and is colourful. East Bengal biryani emphasizes on fragrance and indulgence and aside from the potato use, it stays true to the authentic Muslim recipes before British invasion.

And I'm also impressed with how lovely the country is. In the UK we have many Indian/Pakistani restaurants with Bangladeshi influences (actually quite a lot of "Indo" restaurants in the UK are run by Bangladeshi people) but rarely do we have actual Bangla restaurants. Bangladeshi food looks amazing - nothing like what I had imagined - even better. It makes me want to go to Bangladesh just to try this kacchi biriyani dish! Keep up the great work. 👍
I’m Bangladeshi from the U.K. and honestly the restaurants ran by bengalis don’t do our cuisine any justice. It’s not even authentic south Asian a lot of the time.
@@reya5667 I'm from sheffield (uk) an i completely understand what you mean, for example its difficult to find a proper authentic thai restaurant etc because as soon as different cuisines and cultures come over to the uk, the food is changed significantly for western tastes as alot of peoples pallets wouldn't be able to appreciate the true authentic taste. I just wished that restaurants etc would cook 100% truly authentic genuine food so that way people can actually get a true taste of what the food is suppost to be like.

Nope. Because there was no "Pakistani Cuisine" before 1947, It was called North Indian cuisine. But Bengali Cuisine have been there for a millennia! We've been cooking teharies and biriyanis for at least 400 years! Everything you call "Pakistani" is borrowed from Delhi, Lucknow or Pujab. So never compare Bangladesh with Pakistan!

Preparations of Kewra water is much similar to how rose water is prepared. It comes from the flower of Pandanus Odorifus. It belongs to the same family (pandanaceae) as pandan leaves (Pandanus amaryllifolius) that Malaysians and Indonesians (probably some Thai desserts are prepared using pandan leaf as well) use in their desserts. Shai Jira is Caraway seeds that we only use in our special dishes. And you were correct about "kaju badam" it's cashew paste and not almond paste.
As a Bangladeshi I DON"T UNDERSTAND the hype over Basmati rice. Basmati is so bland and tough. I don't like it at all. Nothing beats local Bangladeshi polaw rices like Kalijira, chinigula, katarivogh, nenia 😍
Chinigura and mango from Bangladesh are the best in the world, I respect different opinions but not open to debate in this topic. Chinigura and kalijira are the most fragrant and awesome rice in the world.

You never find the actual Kacchi Biryani in any restaurant. Because it's not possible to serve/distribute actual Kacchi Biryani in plate with equally limited meat. In the restaurant meat is cooked and are kept separately . It's mixed with the rice before serve in the plate.So restaurant's Kacchi Biryani is totally different than actual.
Bangladeshi food is severely under rated and you have only tasted a handful of dishes, we have hundreds of different recipes some of which are only found in certain parts of the country. I genuinely think it is the best cuisine in the world!

Bangladeshi kacchi biriyani, murg pulao, kababs and roasts are some of the most delicious foods I’ve ever eaten. I’m salivating! Even the traditional bhartas (mashed dishes) are healthy and delicious. The world needs to know more about great Bangladeshi cuisine.

Mark, I know you have tried a number of biriyanis in different countries, even in different Indian restaurants in the States and other Asian countries. While looking at those videos, I was thinking, why you were not visiting in Bangladesh to have the real smell, taste and REAL biriyani. I know you would come to visit Dhaka and beleive that you would be astonished to have that REAL Biriyani. Kewra water/essence is essence of pine. And alu bukhara are preserved plums. Both are traditionally used in rich dishes like kacchi and biryanis in the Bangladeshi cuisine. They add very nice aroma and flavour.
4 plates of Biryani? wow.. I need that appetite. The biryani smell makes me so hungry but then when I start to eat my stomach gets filled pretty fast due to the oily ingredients but my mouth still wants to eat it.
Bangladeshi food is one of the most underrated cuisine in the world. I am a huge fan of Bangladeshi food. Make sure to try the various types of fish in the villages. They have various fish curry which are always cooked with vegetables. Do try the river and sea fish mark. I was so happy see you tried beef mezbani in Chittagong that is a classic. Keep your videos coming mark. You are killing it.

I used to think Basmati is the most exotic rice but since I ate those tiny aromatic rice (Kilzara rice) in Kacchi, Basmati is nothing close to that aroma. However, this is totally my personal opinion but I would tag Kacchi the best biriyani in the world. Since I came to know about Kacchi 24 years ago, I'm still fascinated about it and can't wait to visit Bangladesh soon to try that most amazing dish, KACCHI again. People who have never tried this before won't realize how tempting it is.

I used to work in Dhaka and first time I tasted kacchi byriani, it was honestly like falling in love. I came back to UK and have been searching for the same taste. Everything is a weak imitation. Finally I have decided I’m going to have to try and cook it myself so this video is so perfectly timed. Hope it doesn’t take me 30 years to perfect. Thanks

Biryani has many variations.The traditional kacchi biryani of old Dhaka in Bangladesh tastes and bears no relation to the so-called fake Pakistani or Indian biryani.
Basically the taste of our Biryani will never match the taste of Biryani of any other country and even if you want you can't prepare them in your country because all the ingredients required are grown only in our country.

There are only 2 Kacchi biryani types in the world one is Bangladesh Kacchi biryani & another one is Hyderabadi kacchi biryani both have nizams influences, I had both the biryanis several times, both are Kacchi type biryani but the ingredients what they use in Bangladeshi Kacchi biryani it's impossible in Hyderabadi restaurants and can't even come close to the taste of Bangladeshis Kacchi biryani it is the richest biryani in the world & for the info I'm from South india I have tried almost all the biryanis like Awadhi, Pakistani, malabar, arcot, dindugal, chettinad biryani too, but Dhaka Kacchi biryani is best in the world and my next favourite is our aromatic Tamilnadu wedding function mutton dum biryani cooked with wood fire and we too use a small style rice similar to kalijira rice called jeeraga samba in Tamilnadu or jeerakashala in kerala it will be heavenly👍👍👍

Darknight Yes there is a LOT of truth in your comment. East Bengal which is bangladesh stays true to the roots of biryani. Calcutta is also good (in fact lot of bangladeshis migrated from Calcutta), and Lucknow, Awadh and Hyderabad come as second. You might think i'm just another biased Bangladeshi but i didnt have this opinion i thought Hyderabad and Karachi biryani were superior. I didn't know how rich and authentic Dhaka kacchi biryani is until i tried various biryanis in north India, and various Pakistani and Indian biryani in Middle East and North America. Unfortunately you don't find these briyani kaarigars abroad, the few Bangladeshi restaurateurs in the west don't know this at all.
Darknight one correction is there was no Nizam in Bengal. East Bengal was the seat of the Bengal Nawab. And also the amount of historical Muslim legacy is not known by many can also be found here even though the Muslims suffered and went downhill after Siraj uddaulah's defeat at Plassey. Tipu sultan's family for example was exiled to Bengal. And even direct descendents of Babar through Bahadhur Shah Zafar settled in Bengal where they still live. All that just might explain why certain foods have stayed authentic unlike other parts of the subcontinent

Tradition Bangladeshi kacchi are prepared with fresh meat and chinigura rice ❤️. Many restaurants offer kacchi biriyani with Basmati rice. Basmati is not our grain varient. Usually Pakistani and Indian traditional biriyani are prepared with Basmati varient. Bangladeshi traditional Kacchi and all kinds of biriyani are prepared with Chinigura or Small kindda aromatic rice grains. This is why bangladeshi Biriyani smells and tastes divine 😍
Kalijira rice is another great option. But it is rare to find now-a-days.

@@Neel71 People don't cultivate this rice much now. Even if some of them cultivate, they usually keep it themselves or relatives. Production is much less than compared to Chiniguara rice. I used to eat Kalijira rice (mainly polau) almost every week in childhood. My father sourced Kalijira rice and sold in his shop. I think after 2003 or later it became less common.
Dinajpuri Badshabhog rice is best aromatic rice.But this rice is almost lost.

Wow.. I'm from Karachi, Pakistan, and Biryani is the most famous dish here, but I've never seen Biryani made like this, must taste heavenly, brings water in my mouth.
The variety of rice that is used here makes a lot of difference. Its very aromatic and smaller in size
When I visited Bangladesh, I tried many dishes but Kachchi is the one that stuck with me and my favourite. I remember I ate this at least once or twice a week and put on quite a lot in a short period 😄. The taste is so unique and the aroma makes your mouth water. Dhaka Kacchi will simply knock off rest of the biryanis in the Indian subcontinent. Tried this biryani in 2009 and no doubt this is the king of all biryanis in the world. The taste, aroma, and look everything is so tempting. I would love to visit Bangladesh thousand times only for this dish.

I had opportunities to eat both Indian and Bangladeshi biriyani. In context to the taste and aroma, Indian biriyani are nowhere near to what I ate in Dhaka.
The three best South Asian food which I miss are BD BIRIYANI, SWEETS and LASSI. I never had lassi in India, after once tasted bad. Kerala biriyani are yaaki.

And I'm also impressed with how lovely the country is. In the UK we have many Indian/Pakistani restaurants with Bangladeshi influences (actually quite a lot of "Indo" restaurants in the UK are run by Bangladeshi people) but rarely do we have actual Bangla restaurants. @@reya5667 I'm from sheffield (uk) an i completely understand what you mean, for example its difficult to find a proper authentic thai restaurant etc because as soon as different cuisines and cultures come over to the uk, the food is changed significantly for western tastes as alot of peoples pallets wouldn't be able to appreciate the true authentic taste. I just wished that restaurants etc would cook 100% truly authentic genuine food so that way people can actually get a true taste of what the food is suppost to be like.
If you ever come to Bangladesh, try Kacchi Biriyani with Chiniguara or Kalijira rice if possible. Basmati rice may feel bland after that.

Nope. Because there was no "Pakistani Cuisine" before 1947, It was called North Indian cuisine. But Bengali Cuisine have been there for a millennia! We've been cooking teharies and biriyanis for at least 400 years! Everything you call "Pakistani" is borrowed from Delhi, Lucknow or Pujab. So never compare Bangladesh with Pakistan!

Preparations of Kewra water is much similar to how rose water is prepared. It comes from the flower of Pandanus Odorifus. It belongs to the same family (pandanaceae) as pandan leaves (Pandanus amaryllifolius) that Malaysians and Indonesians (probably some Thai desserts are prepared using pandan leaf as well) use in their desserts.
Shai Jira is Caraway seeds that we only use in our special dishes. And you were correct about "kaju badam" it's cashew paste and not almond paste.

As a Bangladeshi I DON"T UNDERSTAND the hype over Basmati rice. Basmati is so bland and tough. I don't like it at all. Nothing beats local Bangladeshi polaw rices like Kalijira, chinigula, katarivogh, nenia 😍

Because it's not possible to serve/distribute actual Kacchi Biryani in plate with equally limited meat.
In the restaurant meat is cooked and are kept separately . It's mixed with the rice before serve in the plate.So restaurant's Kacchi Biryani is totally different than actual.

While looking at those videos, I was thinking, why you were not visiting in Bangladesh to have the real smell, taste and REAL biriyani. I know you would come to visit Dhaka and beleive that you would be astonished to have that REAL Biriyani. By the way, you had one of the best hosts/guides (#petukcouple the @Petuk Couple) in the town.

Kewra water/essence is essence of pine. And alu bukhara are preserved plums. Both are traditionally used in rich dishes like kacchi and biryanis in the Bangladeshi cuisine. They add very nice aroma and flavour.

Bangladeshi food is one of the most underrated cuisine in the world. I am a huge fan of Bangladeshi food. Make sure to try the various types of fish in the villages. They have various fish curry which are always cooked with vegetables. Do try the river and sea fish mark. I was so happy see you tried beef mezbani in Chittagong that is a classic. Keep your videos coming mark. You are killing it.
