I agree, the sniffer would be like nothing else we've ever seen in Minecraft. It opens the door to so many awesome features and possibly answers some questions around large generating fossils. I feel like rascal would add on way more lore than the sniffer. It may have been the entity that made the mineshafts and it also makes it a new mob as smart as piglins, villagers, illagers, and endermen because it knows how to construct things. Plus it would be a fun friend in singleplayer.
Well this video is more focused on the functionality of the mobs but even if your looking at lore the sniffer is a extinct dinousaur that will "bring ancient knowledge to the game" So I also think the sniffer will bring a lot of lore
