IKEA sells stainless steel perforated inserts that you can pull out and debone easily. They are triangle shaped so 3 fit into a large saucepan . I love them for making bone broth or stock
Great video !!! I never knew the difference between Chicken Stock and Broth. I am planning to make Matzo Balls, and I need to decide if I will make stock or broth.
I just had the lid on to bring it up to heat...and then again I put it on at the end to move the pot so it wouldn't spill lol. For the vast majority of the cook, I had it off so it would concentrate.

This is good for sally home maker BUT in a pro kitchen it does not matter if we are making a veal stock with roasted bones and veg that we cook for 15hrs or we cook just veggies for 3hrs we STILL call it STOCK. I have been in the biz for 45yrs. I used to teach both pro chefs and Sally home maker how to cook. Just my two cents Amy.
Yeah, in practice the terms are used interchangeably. Technically speaking, a stock is made from bones. But most people use it as a broader term probably because the word stock sounds more substantial lol. Thanks for watching, Louis!

I agree. Bones makes the difference between the two. And I’ve been in the business quite awhile myself.
@@AmyLearnsToCook I show my age. To us, broth was meat juice and stock was bone juice.
