When you talked about the raising of animals and the skill of the butchers you resonated truths. Happy animals taste better and the experience of skilled butchers are not to be under estimated. After the last 2 years, many sub standard cuts have come home. It was like an army of slasher noobs took over. Skilled butchers deliver quality service, you get the best value for what you buy and the supplier get the best bang for their dollars. Less trimming, and correct carves. A win-win. Joe, those shanks made beautiful chopped tacos. I just took 2 butts off the smoker and will turn them into copy cat tacos. Thanks so much! Cheers.
Joe wait save me one lol absolutely amazing BARK so tender and that smoke ring the whole 9 yrds here homemade tortillas Pico de gallio fantastic joe great cook my brother
Pork shank is our pork element for our New Year's meal. I just pulled the shanks out of the freezer and they are Porter Road! I am already winning at 2024!
Porter Road. Going to get some in the spring. That was good looking meat and a rural area, hard to find. Plus at 20 degrees and feet of snow. Yep I'll wait till the spring thaw.
It would either really suck or be the best thing in the world to be Joes neighbor. Tempting everyone with those smells and not sharing would be blasphemy. Those look incredible Joe!
You are great. I love beef cheeks and we are lucky to have a small butcher/slaughter house not far away that will give us the beef heads and leaves the tongue for us
My neighbor is a Butcher he gave me a box of those pork smoke shanks for free he said they fell off the truck 😂 I pressure cooked a couple of them with fresh garlic onion. And a little seasoning with a cup of water and one beer in the pressure cooker for about 45 min maid some tacos omg completely ridiculously good.
THANK YOU for Porter Road! I have searched for pork shanks for a while and can't find them anywhere. There's a place in Plano called El Norte that sells a smoked honey-chipotle pork shank I'm desperately trying to recreate at home. Now I can actually try
Wow, awesome job Joe! That looked amazing. I've only used the shanks for soups but this is going on the 'to do' list. Thanks for another great video. 🙏❤
I knew I should have eaten breakfast before I came over to your house LOL The pork looked fantastic, for sure, Joe. Making pico de gallo now.... Great video! ☺👍
Fantastic Joe! That looked absolutely delicious my friend. I was thinking great pico de Gallo, no cilantro. But then you threw it on at the end😢. Keep up the great work brother 👍
Gotta try that, any suggestions on where to look for that cut locally? I cannot recall ever seeing them in the store. But I like the bark to meat ratio, and all that gelatin becomes pure flavor after a trip to up past 200 degrees. Woof.
dammnn i was start to watch u when u maked a polish kiełbasa, im a cook and i love watching how u do that with meat, sorry for my bad english, big fan bro
Just got a call from my butcher and they've got some iberico pork shanks in. So looking forward to smoking them. Who else to teach me how to make them... you Joe. Side question, how do you clean your nozzle on your spray bottle? Mine is spraying a steady stream instead of a mist. I've done everything I can to try and clean the metal nozzle.
Joe, if you stand these up when you smoke them, do they come out looking like little mini beef hammers? that would be cool! Definitely going to try these!
Very nice! I do like Porter Road and being able to buy some different cuts of meat that aren't normally used! BTW- I had asked you a few weeks ago about how to prepare a London Broil Top Round. You mentioned tp make it a French dip. Great recommendation - it really turn out delicious. Thanks!
That looks so delicious. I'm sorry but I would have loved to add some sour cream and a habanero hot sauce. Mt wife is Filipina (I know I told you before) and they take a pork, with the skin like you mentioned, and marinate it for 24 hours the deep fry it. It's crispy and delicious. They call it Crispy Pata.
That looks awesome. I usually get pork/ham hocks but these shanks have more meat. You called them 'chamorro'. Is that what I should ask for at my local carniceria to get these? I'm in Ft Worth by the way, that's why I'm asking. These look way meatier than regular pork/ham hocks and I want to try these.
It´s looks really god. But in the great USA they use 27% more antibiotics than in EU/ and scandinavia. When Im visiting friends in the US, I only eat seafood.
Man oh man, That looks great Joe. Never had a pork shank but I want to try some for sure after this. Great work and I'm loving the display in the background. Swing by and check out my latest if you get a minute. Have a good one Joe.
Thank you for watching my Smoked Pork Shank video. Check out this amazing stuffed pork belly video next. ruclips.net/video/6gdT0PjvXFU/видео.html

Very nice Brian! I've experienced terrible cuts of beef too. It's like they trimmed with the lights off. I appreciate you watching buddy 👍🏼
Joe, I love shanks. In the 70s and 80s huge dish at most resturants. Nice job again!
Yessire! Looks darn good!
Cheers from Norway!
That makes me miss Mexico. Shanks and clamato's are a perfect dinner.

The homemade tortillas paired extremely well with the shanks. Thanks Mark!👍🏼
Not much difference between this video and those of an artist making a masterpiece!!! These Pork Shanks are incredible!!!!!!
When things warm up here in Delaware, I will be trying this. 👍
I love these. I’ve done it with lamb shanks but never pork. I bet that was awesome.

Joe you hit it out of the park as always ... PS you forgot the Cilantro in the Pico. Awesome tacos - on my agenda now.

nice video !
I am sold thanks
This looks amazing Joe! I always thought a pork shank was what pigs stabbed each other with in the pig penitentiary.
Joe,
What Hotlinks where those, I'm looking for some good quality Hotlinks red or brown
Joe, if you stand these up when you smoke them, do they come out looking like little mini beef hammers? that would be cool! Definitely going to try these!
You can but you'd have to French the bones a bit. 👍
That looks great! I like using hot sauce as a binder, I also use molasses which helps make a nice bark, you always have some great tips, thanks
Was that the outter skin on to smoke or has that outter pork skin been removed to smoke?
The skin was removed. I would still trim off some of the heavier silver skin though. 👍
Joe what is the finishing temperature on those pork shanks like 200 205
Yes sir, they hit 206°
Hi Joe..does the 1500 have a bigger cooking surface/area than the 640??
Yes sir, more than double. 👍🏼
New subscribers ❤
Thank you for subscribing 👍🏼
Joe do u have a link for the knife u used on this video ??? thank you
Search 7 inch filet here. dalstrong.com/?ref=4399498.837
Is there a difference in a shank and a hock ?
The hock is normally from the front legs and the shanks are from the back legs. 👍🏼
Would like to see a video of you trimming this cut of meat before smoking.
Hey, you have a link to that spritzer bottle? Thanks
Yes sir. www.qcsupply.com/140113-compression-sprayer-1-1-2-liter.html?Google|Shopping|NB|All_Products|ALL|ALL|ALL|FM&gclid=EAIaIQobChMIrO3bi6zP8wIV6WxvBB2qGwUSEAQYASABEgJMcfD_BwE

i like smoking them and finishing them in beer... i love the skin with a noodleish consistency
Doing a couple of Pork Shanks right now from Porter Road. What kind wood pellets did you use?
I used Jealous Devil Pellets on these.
@@SmokinJoesPitBBQ thanks for your response. I love my Yoder, your RUclips videos and Porter Road!

Yes sir. Ask for chamorro de puerco. If they ask, theyre from the hind legs. 👍🏼
@@SmokinJoesPitBBQ Cool. Thank you bro! I have learned so much from your channel.
I was wondering where the cilantro was😂 You waited til you put it in the taco.
😁 The cilantro wilts with the limes so I add it at the end. 👍🏼
I want that grill
🤤🤤 wow
اتمنى لك التوفيق والنجاح الدائم 🌹👌👌

Without at least 3 days in brine and injecting the pork shanks, they won’t be as well roasted or as delicious as we do it in Poland :)🇵🇱
It´s looks really god. But in the great USA they use 27% more antibiotics than in EU/ and scandinavia. When Im visiting friends in the US, I only eat seafood.
😮where are meat cooking BBQ 😊
Bad timing for me, I'm moving and don't have a freezer to buy the big pork shoulders around the corner for $1.69 a pound.
Vegetarian food please
