    When you talked about the raising of animals and the skill of the butchers you resonated truths. Happy animals taste better and the experience of skilled butchers are not to be under estimated. After the last 2 years, many sub standard cuts have come home. It was like an army of slasher noobs took over. Skilled butchers deliver quality service, you get the best value for what you buy and the supplier get the best bang for their dollars. Less trimming, and correct carves. A win-win. Joe, those shanks made beautiful chopped tacos. I just took 2 butts off the smoker and will turn them into copy cat tacos. Thanks so much! Cheers.

    Pork shank is our pork element for our New Year's meal. I just pulled the shanks out of the freezer and they are Porter Road! I am already winning at 2024!

    Porter Road. Going to get some in the spring. That was good looking meat and a rural area, hard to find. Plus at 20 degrees and feet of snow. Yep I'll wait till the spring thaw.

    You are great. I love beef cheeks and we are lucky to have a small butcher/slaughter house not far away that will give us the beef heads and leaves the tongue for us

    My neighbor is a Butcher he gave me a box of those pork smoke shanks for free he said they fell off the truck 😂 I pressure cooked a couple of them with fresh garlic onion. And a little seasoning with a cup of water and one beer in the pressure cooker for about 45 min maid some tacos omg completely ridiculously good.

    THANK YOU for Porter Road! I have searched for pork shanks for a while and can't find them anywhere. There's a place in Plano called El Norte that sells a smoked honey-chipotle pork shank I'm desperately trying to recreate at home. Now I can actually try

    Gotta try that, any suggestions on where to look for that cut locally? I cannot recall ever seeing them in the store. But I like the bark to meat ratio, and all that gelatin becomes pure flavor after a trip to up past 200 degrees. Woof.

    Just got a call from my butcher and they've got some iberico pork shanks in. So looking forward to smoking them. Who else to teach me how to make them... you Joe.
    Side question, how do you clean your nozzle on your spray bottle? Mine is spraying a steady stream instead of a mist. I've done everything I can to try and clean the metal nozzle.

    That looks great! I like using hot sauce as a binder, I also use molasses which helps make a nice bark, you always have some great tips, thanks

    Was that the outter skin on to smoke or has that outter pork skin been removed to smoke?

      The skin was removed. I would still trim off some of the heavier silver skin though. 👍

    Is there a difference in a shank and a hock ?

      The hock is normally from the front legs and the shanks are from the back legs. 👍🏼

    Very nice! I do like Porter Road and being able to buy some different cuts of meat that aren't normally used! BTW- I had asked you a few weeks ago about how to prepare a London Broil Top Round. You mentioned tp make it a French dip. Great recommendation - it really turn out delicious. Thanks!

    That looks so delicious. I'm sorry but I would have loved to add some sour cream and a habanero hot sauce.
    Mt wife is Filipina (I know I told you before) and they take a pork, with the skin like you mentioned, and marinate it for 24 hours the deep fry it. It's crispy and delicious. They call it Crispy Pata.

    That looks awesome. I usually get pork/ham hocks but these shanks have more meat. You called them 'chamorro'. Is that what I should ask for at my local carniceria to get these? I'm in Ft Worth by the way, that's why I'm asking. These look way meatier than regular pork/ham hocks and I want to try these.

      Yes sir. Ask for chamorro de puerco. If they ask, theyre from the hind legs. 👍🏼

    Without at least 3 days in brine and injecting the pork shanks, they won’t be as well roasted or as delicious as we do it in Poland :)🇵🇱

    It´s looks really god. But in the great USA they use 27% more antibiotics than in EU/ and scandinavia. When Im visiting friends in the US, I only eat seafood.
