How to use Kalita 102 Dripper 1️⃣0️⃣2️⃣💧| Hand Drip Coffee ☕ | My Way

  • 📌 Hello everyone, this is a video on how to use Kalita 102 dripper for hand-drip coffee! I've been using Kalita 102 more often in pursuit of a better body and saw that there's also not a lot of videos about it so I decided to make one according to how I use it. I also show how to fold the Kalita 102 paper.
    Kalita style dripper (101 & 102) are wedge-shaped dripper with three holes in the bottom and ribs on the inner wall. Its design keeps the filter from sticking to the wall and the bottom of dripper, also encourages a smoother extraction.
    I used a mix of UCC's Jamaican Blue Mountain beans and UCC's Mocha Blend (10g and 5g, respectively). My grind setting was set to 25 clicks. I also used 15g of coffee for 240ml brew.

    ⏱️ STEP-BY-STEP GUIDE

    1. Prepare 15g of coffee (Medium-coarse grind; I used 25 clicks)
    2. Boil water to 93°C
    3. Fold a suitable paper filter (I used Kalita 102 Paper Filter Brown) put it in the dripper
    4. Wet the filter (to wash away the papery taste)
    5. Place prepared coffee into the filter and lightly tap it to flatten it out
    6. Pour 40ml for Bloom and throw it away after 30 seconds
    7. Pour 150ml and wait 45 seconds (or until water fully drips through)
    8. Pour 90ml (until 240ml)
    7. Wait for the all the water to filter through
    8. And it's ready!

    Why would you throw away the first 45ml out of the coffee?

      There are many reasons for that! When blooming (first 45ml), the carbon dioxide that are trapped inside are released, which allows more exposure to the water and thus better extraction. Because of that, the 45ml bloom 'water' is under-extracted leading to a acidic/sour taste! Also, in methods of making tea, many 'washes' the tea leaves before brewing and so we applied this to the coffee brewing process to wash away the 'firewood taste' that is retained within the coffee beans from the roast.
      There is a video on my channel about that if you want to understand it better, but ultimately brewing coffee is about your way and preference! So have a try yourself, and even try tasting the first 45ml so see how it tastes like and whether you want to include it in your coffee! Hope that was helpful! c: (note: if you feel like its a waste to throw it away, you can just discard the first 20 to 40ml depending on your preference)

    Just tried this and I got the worse coffee from my kalita 102 ever. I ended up mixing the bloom coffee I had set aside and got a better tasting coffee. I had my Kalita 102 dripper for almost 2 years now and it is a fantastic dripper especially for beginners as it always gives you a good cup of coffee as long as you do the basic manual coffee brewing methods.

    Thanks for the step by step. Lots of videos on other methods like the V60 and Wave but few on the standard 102, so thank you! Sometimes in the morning I just want really good coffee no- brainer style. Have the Chemex, Wave, V60, and others. I like to practice and to get competent with all methods. The most challenging part is bouncing around from one grind size to the next. I have the Encore on setting 14. Any recommendations?

      Thank you! Uhmm I'm not too familiar with the specifics on grind size, but if you're looking for a new dripper, I would recommend Kadou M1 Dripper, it has a pretty different design compared to the mainstream ones and it's pretty popular and well-known amongst the Taiwanese coffee community. Sorry I'm not able to recommend specifically to your need 😅.

    Not sure why you entitled this as how to use the Kalita 102. It is more like how to brew pour over your way. I have a Kalita 102 as well, and I have tried various methods, including the Tetsu Kasuya method. I have also used paper and cloth filters. They all yield something different and all enjoyable. I find that I like my coffee a bit acidic, contrary to why you discard the bloom water. So, this is how you do pour over, and has nothing to do with how to use the Kalita 102.

      Yea, I fully agree with you and I did contemplate on whether I should stop saying 'how to' because I understand that making coffee is fundamentally based on your preference, on which method you prefer and how you like your coffee. That's why in my most recent video (origami) I had already decided to remove the 'how to' out of the titles. Thank you for the feedback!

      Can we use the various V60 recipes into this dripper? I have two Kalita drippers tucked away & not yet use it. I just hone a handful of V60 recipes & wondering if we can apply it or there are adjustments needed. Thanks.

      I think both are fine, but V60 is definitely more versatile I would say if you're want to just get one dripper

      @@KraftKetchup1990 V60 is a popular dripper that the majority have, thus there's many techniques or methods that involves using a "V" shape dripper. Kalita is a bit easier to use and provides a better body than V60 (since its flat-bottom).       @@jeffersonchen9609 Thanks for the insight. The tread was helpful. I'm always interested what "coffee people" think about the Melitta/Kalita style brewers, since I never see them being used in pour over videos. But then most drip machines use them.

      @@thelenux The total time is about 2 minutes; the first 150ml finishes at around 1 minute, then second pour begins after 15-20 seconds. I don't really mind the pour time that much, so it may be a bit off/inaccurate.
