my guess is that its just for convenience. if any of the other variables turned out to not be integers after solving for a = 1, he could then just find the common denominator that makes the stoichiometric ratio possible.
you could start with any variable be equal to 1. These sets of equations have infinitely many solutions so using 1 gives it a possible answer that we can then multiple or divide to get values that suit the equation.

It's arbitrary. You have to start by assigning a number to one of the variables. I just choose A=1 to keep it simple.
