How to make French Fries - using FRESH potatoes

We farm potatoes (spuds), and each year after harvest, we choose large potatoes and make fresh, homemade French fries. They are best when you use fresh potatoes, but you can use whatever potatoes you have - even red or yellow potatoes.
Depending on which potatoes you use, you could get varied results, but they should still taste good.
