Actually the onions were originally to mask the taste of the brined herring later in the season. But that's not necessary anymore because they get frozen. In Amsterdam they fancy it up with gurkin and onion because that's how they are.

The gurkin was used to mask taste of perishment. Unless you're in a coastal region eating it as it comes in, it perishes quick. Gurkin and onion were also used to mask tastes of it going off as trade took the catch inland, or being served outside places where it's served right off the boat.

Yeah the peanutsauce is actually meant to be made with some deepfried onion, stock and spices and some sugar so it's very rich. Every snackbar has their own kind, it's from the Indonesian influence. The curry ketchup sauce on the frikandel has loads of spices in it, I like to mix it with mayonaise for my fries. It's always very funny when foreigners try drop, I was starting to think you were the exception until you got a strong one, haha When i was a kid they'd hand it out at the drugstore for free to us, assuming that we'd like it, and I did. But foreigners have the best reactions. It's not something I eat bags of but once in a while getting the taste explosion, there's nothing like it. Weak drop is actually the worst.

5:50 - "It's not as fishy as I thought". Your host knew his way around, apparently and took you to a very good address. If it smells/tastes fishy then it already has started to decay. When the fish is totally fresh, it smells like the sea. The onions are a way to camouflage decay and fishy taste/smell, but when you are used to raw fish - like I presume any Japanese would be - then you will not be fooled by that. A Rotterdam-based national newspaper used to go around and test outlets of raw herring and this reveals big differences each year, between one address and the other.

Always skip the onions when eating fresh herring. Some try to sell you old herring, and do mask the oily and nasty taste with a Tsunami of onions. If you want onions anyway, demand they put it aside of the herring. It is the oldest trick in the book and not all herring vendors can be trusted.

The licorice candy you had barely qualifies as licorice tho. Thats almost the same as calling Cadbury chocolate chocolate. I dont blame you for disliking the taste of it.
If you'd ever want to try it again, here are some suggestions. From Venco, there's 'muntdrop', 'katjes' and 'honingdrop'. Sweet and tough licorice. Haribo has you covered with 'zoute bommen' and 'halve manen', salty or sweet and both chewy (tho the zoute bommen are relatively sweet and a bit tough too). Katja has 'zoute haringen', if you prefer a more salty and chewy flavor. For salmiak, you could try some 'riksen' from Klene (chewy) or 'tongen' from Meenk (tough) and f you really aquired a taste for it all, there's always the 'briketten' (dubbelzoutjes) from Venco.
