Funny true story... My wife and I went to very upscale, sophisticated restaurant for an anniversary. We were seated in a nice secluded booth, but very close to the live lobster tank. As we sat there people watching and talking,we saw each waiter and waitress bring a couple over to the lobster tank and let each choose the living lobster they wanted for dinner. Interestingly, we noticed that after the chosen lobster was ceremoniously removed from the tank ,placed on a flat s.steel platter, and then carried into the kitchen.. The happy couple went back to their table, and sat down. Then, we began noticing something odd...after say five minutes or so, a waiter would carry a live lobster from the kitchen back to the lobster tank and drop it back in the tank. After seeing this process repeated several times, my wife and I had a light bulb moment. Ha,ha, the kitchen wasn't actually killing and cooking the live lobster. There's actually a province here in Ph in which lobster are used to be fisherman's staple food. And then business men knew of this, they've started to negotiate with local fishermen. They are buying lobsters for insanely low price from them and businessmen bring lobsters in the city and sold them expensively.
So what i‘m getting out of that is: Only mass farm stuff that you don‘t like, so you can sell it at high prices without your actual favourite stuff getting expensive.

Canadian lobster are apparently cheaper and not as tasty as Maine lobsters, because the water is colder. Apparently Gordon Ramsey will only use them in soups.

I'm a live crab and lobster supervisor in the shellfish factory i work for. Here in UK, female lobsters carrying eggs are legal to be sold, the Chinese don't want them but we do ship them all around Europe, there's no such thing as too big lobsters either, although they do taste much worse than let's say 600-g 1000g ones. They can only be too small in which case fishermen would release them back into the ocean, or in very few cases they would try to mix them in with the rest of the lobsters and we would be returning the small ones as we do weigh every individual lobster by hand.
There are plenty of spots in NYC that charge around 16 to 20 bucks for a lobster roll. Remember, they have to ship their lobsters from New England. 38 bucks is not the norm here either.
I'm guessing (just my guess) at ed's lobster bar, you're paying for about $4 of maine co-op lobster, a bunch of shipping and a lot of ed's lobster bar overhead. Dumb.
He is definitely over charging. I'd say it's around 4 to 8 dollars of lobster but the price will be higher because he's in New York. Yes I live near where they are fished for and my friends have traps but that's the price I've always seen them for.

There's actually a province here in Ph in which lobster are used to be fisherman's staple food. And then business men knew of this, they've started to negotiate with local fishermen. They are buying lobsters for insanely low price from them and businessmen bring lobsters in the city and sold them expensively.
Answer: When people like things, they try their hardest to source in large amounts despite scarcity, driving up prices.
Yeah and when things are expensive people cook the thing with good ingredients and try harder to make it delicious.

More Canadian?
Canadian lobster are apparently cheaper and not as tasty as Maine lobsters, because the water is colder. Apparently Gordon Ramsey will only use them in soups.
@Camden Hanscombe yeah it still seems a bit strange to say a province that is in Canada is more Canadian than an American state though. It's logical, but awkwardly phrased.

$38 for a Lobster Roll (NYC prices) these people are smoking - GOOD lobster rolls with lobster fresh off the boats in RI / CT / MA are $15
There are plenty of spots in NYC that charge around 16 to 20 bucks for a lobster roll. Remember, they have to ship their lobsters from New England. 38 bucks is not the norm here either.
Ok I thought I was the only one who heard $38 for a roll.
