You can actually instantly unlock every mode if you punch peppino 100 times on the file select. I recently started playing this pretty much nonstop after it got added to switch, an amazing port and 20 dollars well spent!
Fun fact: The character select screen was originally scrapped from some older demos, and now it has been put back in!
