The reason the Death Troopers can't hit him is because he is using the force to create an illusion of his position to trick them. It's like trying to grab a fish out of water- the sun's reflection shattering and splitting the image. That's why the one Death Trooper then realizes that the same thing doesn't apply to the console, which is why he blasts it to kill Chirrut. I would get your point if you were complaining about Baze Malbus, because a squad of elite stormtroopers shouldn't miss a thicc boi that many times, but it makes total sense with Chirrut.
