  • Gur/jaggery rice, is sweet rice, very popular in India. It is loved for its sweet and warm, aromatic flavor. Serves as a great dessert at the end of meals, especially in Winters.
    Ingredients:
    Rice ( 1cup)(200 gm)( Rinsed and soaked in water for at least 30 minutes)
    Gur ( chopped 2/3 cup)(130 gm)
    Milk ( 100 ml)
    Desi ghee ( 2 tbsp)
    Water (600 ml)
    Chopped Nuts ( as desired)
    Whole Spices ( Bay leaves, Cinnamon sticks, Cloves, Green cardamom)

    Very good recipe for Gur rice, and tips are explained very well, thanks. One thing please clarify the water in which the rice is soaked & drained, boiled & drained having vital minerals and vitamins, can we use this water in the recipe instead of draining.

      Thanks. Do not use that water for cooking this rice. We have removed the excess starch from the rice in that water so that the gur rice do not become sticky

    Apne bataya esa bhaji hamne banaya. Thats, loki ki shabji with roasted wheat flour gravy.
    The gravy stuck bottom. And loki ( gaurd) did not ripe up for long time. But when it was cooked the shabji was delicious.

      I am curious to know what you mean when you say gravy stuck bottom? Is it that the gravy dried up and the subzi stuck to the bottom. Please let me know, maybe I can suggest a remedy

    The cooked rice is well cooked and separate as well.
    But white flakes of broken milk is around.

      Daneshwari, heat inside the pan is the sole cause of curdling of milk
      Make sure to add cold milk, and keep heat at between low-medium or at low to prevent milk from curdling. Work on the smaller burner on your gas stove so that heat is not very high

      Yeah sure, you could add edible colors, try to go for yellow/orange. These will blend better with the natural color of jaggery

    Thanks for telling tips on how to use jaggery. What I don't like is draining away water in which the rice has been soaked or cooked as with water go away many water soluble vitamins. 🙄😭🧐

    I made guud rice. With milk. Milk broke. Then rice was sweet but white flakes of milk raised in sweet rice.

      @@poonamskitchen Aww... but truth is you instruct so perfectly that one cannot go wrong. I just finished making this for parshaad, it took my breath away. I made using 500 gms rice (which was 3 american cups) and hence 2 cups of jaggery powder ( my Kolhapuri gud blocks had gone weird (used your testing tricks). The gud powder was a dark variety, but it did not spoil the looks. Just got dark brown rice. Everything was just perfect. Thank you.

      There is this to Indian cooking: God lies in the detail. How to modulate heat, when to cover, when to stir, how much to cook, how much to wash the rice.... y=these impact the resultant taste. That is why Indian cooking is really cooking, not assembling. Maybe you could request Poonam for english subtitles. Hope you enjoy these tips and recipes.

    Very well explained but I will not try and leave it for Prabhjyot to make. I am not at all confident of heating gur. Slightly more heat and पत्त चढ़ जायगी
