  • For the marinade:
    1 cup Plain Yogurt
    3/4 tablespoon Ginger , grated
    1 tablespoon Garlic , minced
    2 tablespoon Lime juice
    2 teaspoon chili powder, adjust to taste
    1/2 teaspoon Ground Turmeric
    2 teaspoon Garam Masala or your favorite Curry powder
    1 teaspoon Coriander powder
    1/2 teaspoon Cardamom powder
    Salt & Pepper to taste
    2 teaspoon Annatto powder, for color
    Combine all ingredients for the marinade in a bowl and mix well. Add chicken and coat each side with the marinade. Let it marinate for 1 to 4 hours in the refrigerator. (The longer the better.)
    When ready to cook, add the vegetables to the marinade. Mix well.
    Thread the marinated chicken, and vegetables on to the skewers alternating between each. Cook until inner temperature reaches 165
    1 Lbs. boneless chicken, cubed.
    1 Zucchini
    1/2 Red Onion, cut into 2 inch cubes
    1/2 Green Bell Pepper, cut into 2 inch cubes
    1/2 Red Bell Pepper, cut into 2 inch cubes
