I like how european macarons are small, dainty little things and make it Korean and it becomes those huge and luscious wonders you would never dare to dream of
It is amazing how much technique is in all of this Even separating out the yolk from white requires a crazy amount. If you mess up one yolk, meaning it bursts, then you probably have to throw out all the material. Or use it for something else. I really like how you make sure to add the extra coloring to just the side instead of a 50-50 split. That's for sure a new technique for me. It adds interesting depth to the overall appearance. Thanks for reminding me that I need to get a baking rack

At this volume it wouldn't be as much of an issue if there was a teeny-tiny bit of yolk. But if you're making something with only 3-4 eggs? The added protein from a broken yolk can be a problem.
@@Cruznick06 definitely not, even the teeniest bit of yolk in the egg whites will mess up the meringue despite the volume. But! You don't have to throw out the whole batch. I actually worked in a macaron factory for a while (one of my favourite jobs ever I genuinely miss it so much) and the eggs would burst all the time just cracking them :'( so you'd end up trying to catch it before it all went into the bowl, but wouldn't really work lol. But the thing about the egg whites (especially if there's a lot of them in there together) is that they're really dense so when yolk spills the tension of the egg whites keeps it pretty contained! So if there is a spill of yolk its a pretty simple process of fishing it out with one of the shells and dumping it. Sometimes you waste a lot of white trying to do this (so many times a yolk bursts in the bottom that you don't see till the end it's agonising) but it doesn't need to be the whole batch!

But I couldn't see almond powder in the video... Only egg white and sugar. So they are rather meringues. And there is (at least surely) 3 types of meringue : Italian, Swiss and French. Apparently here it is the French one because the sugar is not melt
저는 학원에서 제과제빵 배울 때 마카롱했었는데.. 까다로운 제과 품목으로 기억해요. 제빵사와 케익 아이싱파트에 잠깐 일했었는데 제빵 제과가 다른 매력이 있지만 제과는 숙련도가 더 필요하죠. 개당 2500원이라 써 있던데.. 다른 마카롱 가게와 비교해도 비싸지 않고 재료 쓰시는 것도 신선하네요. 데코도 엄청 손이 많이 가게 만드시고 예쁘고요. 원형깍지 짜는거 힘조절도 그렇고 손과 팔에 힘도 많이 드는데.. 수제 마카롱 대단하네요~ 지방이라 근처 갈 일 있으면 꼭 들르겠습니다.
