    Yes I shared my moms recipe a couple years ago w Wendy about how butter milk powder took away all the dryness. Mom never made hers w any butter powders or arrow root. She had been using Jay Rob protein a table spoon..just in the original recipe..and one day she didn't have any but used Buttermilk powder and it came out wonderful so when Wendy was experimenting a few years back mom sent Wendy a request to try Buttermilk powder. Even though mom' was dairy free the trace amount helped hold the form created a lite moist bread and it didnt upset her food wise...it was always still delicious... and no chokey...bread.. and since then Mrs Wendy has posted lots of bread experiments aka "wendys way"... Love all the kitchen hacks from you and Ms Wendy ! I've said it many times you and her need to team up and produce the bread and sell and ship it ! Lol ... it would definitely put all the kids through college ! And or definitely roll alot of cash into Nili and families homestead ! Oh and then you could build you a commercial kitchen Barn !🥰🥰🥰🥰 Whoohoo ! 😉 with lots of room for those beautiful Food testers to help you! Aka the kiddos..what a wonderful family buisness... "Nili Farms ... Fresh Bake Goods! " or Indigo Farms 🚜 specializing in Ketogenic and low carb Goodies ...*Take my money 🥰🥰🥰🥰🥰🥰

    I use to make the Butter Milk powder recipe... UNTIL... I grabbed the Coconut power and did not realize it, until I was already in my ingredients. Oh well, I just continued on and I will never return to buttermilk again. I love the coconut ingredient!!!!!! The bread comes out so nice and so soft!!!! I leave my bread in the oven for 20 minutes after turning off the oven. (Just Incase it wants to fall). Thanks so much for your recipes....Take care and hugs!!!!

    Two things, not that you asked 🙂 (1) you are looking especially trim in this one (2) the infusions have truly brought the color back to the apples of your cheeks instead of the rosacea-lke butterfly across the bridge of your nose. One of these days I'll get the nerve to mix up a batch of the egg white bread LOL

    Hmmmm, wondering what yoghurt powder might do. Looks like it has 5 carbs and zero fat per Tablespoon. Cream cheese powder has 1 carb 2gr fat per Tablespoon. Amazing we have so many powders available to us now … parmesan, Swiss, cheddar, vinegar powders … exciting experimentation runs wild!!
    I have also purchased some of the freeze dried berries: raspberries, blueberries and strawberry pulverized them into powder and mixed/swirled them into a sweet bread version - nice taste treat success for me.

    I think there isn’t much fat in butter milk powder (butter milk) because originally butter milk is the milk (liquid) left after the butter (fat) has been separated from the milk/ heavy cream. Please correct me if I’m wrong.

    I’m not sure if anyone else mentioned this…..When you compare your butter bread recipe with Wendy’s buttermilk recipe, there is a difference in water and Egg white powder. Wendy uses 1 1/2 c of water and 120g of egg white powder. I like your 1 1/4 c water and 100g of egg powder as it doesn’t overflow my pan. Do you think more or less egg white powder and water mixed with the other ingredients would make a difference? I have been making your Best Bread recipe every week since you posted it!! My husband isn’t too excited about taking my big Kitchen Aid mixer in the rv…….but I have to make your bread!! Its a staple in my eating!! I really enjoy your info and how ‘real’ you are! Thanks so much!!

    Do you think that I could use a strained (Greek) yogurt in place of the buttermilk powder? I also prefer to add 1T Coconut flour, - so that can absorb the liquid + 1 T Melted, cooled butter. The powders are difficult for me to buy and I am lactose intolerant, so the milk is difficult, but strained yogurt is fine. I totally enjoy your bread-making videos - could watch them all day! Please let us know about the Buttermilk + Butter powder test results.

    Is there anything that could be used instead of egg yolk or whole egg powder? Even if it's an ingredient that you personally don't use due to sensitivities. Or do you think it would mostly work to leave it out? Maybe use heavy cream powder or coconut milk powder or....?

  • @jantullie90

    Love your recipes. The bread has been a revelation for me. It does however, become sticky on top when I store it, only after 1 day. Would you know why? Yes I leave it till properly cold before I store it. Happens to both loaf top and buns. I still love them tho 💕

    • @critter4004
      @critter4004 2 года назад

      Jan, yes this happens! But there are ideas. Nilli sometimes dusts the top with either coconut flour or butter powder. The "ketogenic woman" (RUclips) suggested brushing the top with beaten egg. That works too! There will still be a few areas that get sticky but only where you miss getting the egg brushed on.

    The new bread looks too memory foam and potentially choakie. I really like the look of the butter powder alone. I'm interested to see how the next experiment goes with the combo of both powders (though buying a new ingredient is a bummer).
