funny you say that because half of the spices in the pantry aren't literally spicy. Most are flavorful, aromatic, earthy and fragrant. A few are actually spicy/hot. I've been to India (just New Delhi but I'm planning to visit again) , Mexico and South Korea (only Jeju island).
I can attest based on experience that Mexico has the spiciest food, 2nd is Korean (but not all of their food. some are mild) and I can eat most Indian food with no need for water.
The wonderful thing about most of Indian food is that it's literally spicy (full of spice) and not really spicy (hot).
Also it's not true that street food in India cause food poisoning. At least in my case I didn't had any. Just an upset stomach because of tap water but the doctor consultation and medication is cheap so at least there's that ❤
