If you buy a pressure canner, get the all American canner. It has no gasket to replace and the rocker regulates the pressure depending on how you mount it. So you don't have to stand there and play with the fire to try to get the pressure you need.

I don't do much canning anymore but when I did i used an American canner ( which was given to me) and was simple, safe and less intimidating. I don't know how much they cost but the worry free results have to be worth it compared to the fear of death.
One tip I learned as a kid...when you catch salmon that are black-belly or not as chrome as you'd like, fillet them and place the fillets skin side down on racks (oven racks or similar) and cover them in rock salt for a couple of hours. It will firm up the meat. Don't use table salt/small crystals, because it will stick inside the meat and make it too salty. So after a couple of hours, wash the rock salt off and place in your salt/sugar brine. Thanks for the content! Nice job. Cheers!

I can a lot, and canned salmon comes out SO good. Unlike other meats that can somewhat dry out, salmon is always very moist and just melts in your mouth. Just want to also add, you do not need to smoke the salmon to can it. It comes out great just with salt only! (for those who don't like smoked, or don't have a smoker). *Please always follow the USDA guidelines for canning. Happy to see they are so strict with the guidelines. It's important. But other than that, canning is pretty easy and you can preserve so many different types of food!
We can both smoked and fresh salmon every year from the Klamath river close to Weitchpek California. You should come to the Yurok Reservation and try fishing here.
Great pancake: 6 eggs, 2 bananas mashed, 1/2 tbls ground cinnamon. Mix well and ladle on a skillet. Put blueberries or raspberries on it. Honey is a choice too.
🌴 well you two , this was an interesting and educational vid , really wanted to see ya hook up on some big salmon , as for the canning we lived on a farm for many years ,and did this with all our garden veggies and even some salmon and lake trout, make sure the jars are sterilized,and don’t touch the tops as they will make a popping sound when they are ready ,if they count pop on there own then there not sealed and you have to use them right away , be safe ,have fun , live life 👊🏼✌️
Taku if you're looking to catch sockeye (red) salmon without snagging, it's pretty simple: always only use "coho" flies (yellow/red deer hair) 30 lb mono line straight to a limerick #2 hook, a pencil weight attached with surgical tubing. Nothing hanging to snag and only 1 knot to break Cuz those reds and stream current will put tremendous pressure on everything. Using those puff balls or beads are bait for dollies and rainbows looking to scavenge eggs of spawning reds. When doing smoked salmon it's much easier to freeze it, As most Alaskans have 2 big chest freezers. Add some sprouts and pepper to the salmon with cream cheese on your bagel!!

Fun to watch. I pressure can albacore and salmon. It’s the best! I only get albacore when weather conditions are right, and the fish are close enough to Fort Bragg or Bodega Bay. I eat some fresh, give some to my neighbors, and pressure can the rest. It makes the BEST tuna salad. I have never pressure canned my smoked salmon, but will give it a go! My wife and I had salsa made with kelp when we were in Ketchikan in June. It was really tasty!

Then I went to website to grab some liquid heat and crisp and then an ultimate sadness gripped my body and I went through the five stages of grief lol. Alas not available yet but will patiently wait. For those people who haven’t pressure canned don’t let this scare you it’s a piece of cake. I have an All American and a Presto and happy with both. I can over a hundred jars of pork green chili for Christmas gifts every year and a whole lot more. Congratulations on your endeavors!

Eat it with other foods, similar to a chili oil seasoning. Use it in the same way. I have chili onion garlic crisp which is the same thing, in chili oil, and I use it in butters, causes, directly dip different thins into it (it’s medium spicy but depends on the chili oil in it). This is the same stuff just is made with kelp Chips as part of the flavoring and texture. The more widely available and used chili onion garlic crips is a great addition to anything you would like with a garlic flavor plus some heat and a little crunch. One of my favorite things I’ve used it in is with lobster or carb, instead of melting butter with lemon and a little garlic, I melt the butter and add my chili onion garlic crisp and still use some lemon juice, and it is so freaking good, it becomes almost sweet with all three mixed together, yet still spicy and a garlic kick mixed with the great sweeter flavor of lobster or crab. I’ve basted steaks in the same sort of mixture without the lemon, like I would baste them with butter garlic and thyme, and it adds a totally different flavor and spicyness to the steak for something different sometimes. My friend eats it straight with pita chips and it’s good like that too

I was just in Juneau a few weeks ago and I went to that Deckhand Davies taco company and we were basically drinking that hot sauce. So damn good. I didn’t see any of their canned products but I bet it’s super bomb.

All American is a great brand but expensive as hell. A regular 23-quart presto works really well for anything that the average person does.

Use a proper pressure canner see your local extension service for valid information, improper technique can set up nasty food poisoning
You can add lemon to bring up your acid content.
