Bourbon Balls Recipe

INGREDIENTS
▢ 1 ½ cups crushed vanilla wafer cookies about 45 cookies
▢ 1 cup chopped pecans
▢ 1 cup powdered sugar
▢ 2 tablespoons unsweetened cocoa powder
▢ ¼ cup bourbon whiskey
▢ 2 tablespoons light corn syrup
▢ ½ teaspoon pure vanilla extract
▢ Additional powdered sugar, holiday sprinkles, cocoa powder, etc. for rolling the bourbon balls.
INSTRUCTIONS
1. Place the vanilla wafer cookies in a blender and pulse until they become fine crumbs. (Alternatively, you can place the cookies in a plastic bag, seal it, and use a rolling pin to crush the cookies.)
2. Combine dry ingredients in a medium-sized mixing bowl. Add the crushed cookies, chopped pecans, powdered sugar, and cocoa powder and mix with a fork.
3. Add the wet ingredients: Pour in the whiskey, vanilla and corn syrup. Mix well until the mixture forms a dough-like consistency.
4. Using a small cookie scoop, roll small portions into 1-inch balls. Roll each ball in powdered sugar until they're evenly coated. This gives them a nice finish and helps prevent sticking.
5. Place the bourbon balls on a plate or baking sheet lined with parchment paper and refrigerate.

I made these once years ago and hated the flavor. Can they be made with Amaretto or Kahlua instead? It might make them too sweet. What about cold brew coffee concentrate for a non-alcohol treat?
Yep, if you don't like bourbon, you won't like bourbon balls! They can certainly be made with Amaretto. If you're using Kailua, then I'd recommend this recipe. They are unbelievably good! bowl-me-over.com/kahlua-chocolate-truffles/ Enjoy the treats!!!
Of course, you can make them with any liquid you want. As you mentioned, using a sweet liquor will make them sweeter, so I'd be careful with anything too sweet like Kahlua. (What about rum? brandy? maybe even wine.) You could reduce the sugar, but that's what helps make them stick together. Maybe include more of something solid, perhaps toasted oats.
