Greetings. I live in the States and don't have access to several of the spices mentioned. But, many things I did, and well, I used what I had. The dish came out beautiful and very, very tasty. I did however add a scotch bonnet pepper at the last 30 minutes along with pigeon peas. So very good and hearty. This is our meal for Samba. Matondo!!
I was just as curious as to what "cotes" are. I even googled it and nothing but a certain type of wines popped up. Too bad she doesn't respond to the comments section regarding her culinary skills from people who admire it and are on the quest to beef off their own culinary skills.
