Pumpkin pie has always fascinated me, being a Brit who loves holidaying in the states around this time of year and how much Americans love all things Pumpkin I can't seem to find the appeal. That being said I have never tried pumpkin pie so maybe I should give it a go although I have to confess I'm not a huge pie fan. Beth - I use the pie crust recipe my mom used that she learned from her mom, it calls for Crisco instead of butter. The filling is the same and I remember as a kid wrapping strips of aluminum foil around the edges of the crust. My version calls for frosting the pie with whipped cream before serving. I don't care for marshmallow but will try piping the whipped cream instead. Thanks Beth! My mom's side came on the Mayflower so over the years I've learned that it was a very brutal first year and without the help of the local Wampanoag people, the new comers would have perished. The first celebratory meal was probably called the Harvest Meal, the surviving new comers had lived the first year, and the meal was prepared with the help of the Wampanoag to celebrate. Anyway, they didn't have Pumpkin Pie because they didn't have flour, they had a crustless Pumpkin Pudding. The main meat was fish, maybe water foul but no turkey, all supplemented with plenty of Autumn vegetables and fruits. Also, unlike many now days, they didn't eat like hogs because they didn't have much.
Growing up, my grandma always said you can tell when pumpkin pie is ready when you stick a butter knife in the middle and it comes out clean. So her pies always had a cut in the middle from the butter knife. I like your tip to know if it's ready more. :)
Hi Beth this is a beautiful pumpkin pie recipe your mother has I love it and would love to make it as I've never had pumpkin pie before. We don't have canned pumpkin so I make my own purée but you say you need 15oz, so would it still be 15oz of homemade purée?
Hi. I was able to make this for our halloween potlock. Do you have any recommendations to "amp" up the marshmallow flavor? It was a bit too fun making it, but the flavor was bland. Will adding more vanilla cause deflation of the meringue? other ingredients? :)
Ha! Never a silly question here :) I use Kosher salt for all my cooking and baking :) I find it's less "salty" then table salt and provides great flavor for anything you need to salt.
hello Beth, so yesterday I tried this recipe and a couple of things went.. let's say different. :) 1. The Dough. I followed everything you said, except: I added about 3 tblspoons of raw kakao powder because I wanted a kakao-dough. And then I hadn't had the sam pie tin as yours but one that is out of silicone. Which is great for not having to worry about sticking. It was the right size, so I went with it. Decored the dough beautifully into the pie form and put it in the freezer for an hour. And then I put it in the oven, I thought "let's bake it for 10 mins before I put the filling". Well. All the edges collapsed and I nearly had to cry which was an overreaction but still. My mum kind of saved the edges with a fork pressing it to the sides but it was too crumbly. 2. The filling. We don't have that canned pumpkin puree here in Germany, so I went ahead and baked my hokkaido cubes in the oven, just with some brown sugar and I even intentionally let it burn a bit - for the better flavour. Then I pureed it and it was soooo sticky and not runny like yours - but the flavor was on point and I wanted to get as much pumpkin flavour as possible without added flavour, so I was fine with it. With the condesend milk and the eggs it still wasn't as near as runny as your filling, but then - remember - my dough had collapsed, so it was perfect, because otherwise it wouldn't have worked out with the dough anyway. As a result I didn't let it bake for as long as you did, but maybe half the time.. about 40 mins or so. I also added a "creme brulee topping" as I caramalized some sugar over it (I saw that on another channel). The filling is quite "filling" as it is so flavoursome and just really "neat" if you can say so. Any tips why the dough collapsed? Was it the silicone form? Anyways, I just wanted to report back :) I've done other recipes of yours and everyone worked out so perfect, especially the scones

Ahh great question! OK I wouldn't do the homemade marshmallow then, since the egg whites can be problematic. Instead I would use store bought marshmallows, pop those on top and toast those instead. These are shelf stable and don't come with the same risks. It would be easier for you that way too!
Different and better!! When you do try it I'll give you a secret, when doing the recipe: ( bake the sweet potatoes, don't boil them, boiling the potatoes loses its texture and that rich sweet potato taste)
