Beautiful. I just felt that the ganache was in excess. I could be wrong. My question is, do we need yo add room temperature ganache or can we prepare it and keep it aside for an hour or so? I want to understand how quickly we need yo act eight the ganache . Thanks
this is the challenge, what I do is I add a little extra all purpose cream and talk to the client that I will be delivering last minute so they have to pull it up as soon as the cake is delivered. I discuss the possibilities with the client first. Some would ask me to assemble it a few minutes before pull up.
I'm sorry to hear, I should have placed a disclaimer. All ganache would thicken over time. What I usually do if it's for a client I deliver it last minute so it's still flowing . I also inform clients in advance of the possibility that ganache will thicken. We tried using more ratio on the cream to chocolate it's too runny and taste would be different.

I used your ganache ratio and after 5h, it thickened and didnt flow. :( i used beryls white choc block and everwhip. :(
