I miss cooking for large numbers / groups. I was head chef at an addiction treatment center and fed 120 clients. I loved that work. I was under paid and over worked so when they told me I must be vaccinated to keep working , I had to walk away. Now I am suing them , so we'll worth walk away. Cooking is not work for me , I love it. This reminded me of what I used to do. Thanks for the channel.
I really struggle in the kitchen with getting overwhelmed when everything is going on at once. Doing mise en place really helps me, it is so much easier! Much less overwhelming - but I don't really know what I'm doing, so this helps me immensely! I hate cooking, I get so stressed out, but the food I make always taste amazing! 😂 People say, "Ah, you like cooking don't you? You are a great cook!" And I say, "No, I hate cooking and I'm not very good at it, but I love eating and my food is tasty!" My kitchen is also really small and I have barely any space to put things. I'm always bumping into things, making a mess, and burning myself. 😅 Cooking takes up half of my day too, I take long to make anything. I spent 5 hours the other day just to make mexican rice, black beans, roasted veg, and salad! 🫣 It was so good though, way better than the restaurants in my area. 😭 (Excluding the really fancy ones I can't afford and haven't been to.) Mise en Place takes up a lot of room but it's invaluable to me! Thank you so much for sharing your tips! 😊

This is not what it means in spirit. Depending on when things will be added to the dish the ingredients should be together. Creating less time wasted grabbing things and less dishes to clean. Like for baking have a wet bowl and a dry bowl and measure everything out in another one or two containers.
