Why does he always change the colour of peoples shoes? I have noticed in these videos that whenever anyone has light brown shoes or yellow or orange he just changes the colour to dark brown??? Does the customer want their shoes changed colour??
Most of these shoes are donations/his shoes (from what I understand) so he does what he wants. Its always harder to color match light colored shoes so its usually easier to just add a burnish or make a darker shoe. Some imperfections require a color change. Angelo either doesn't have the color needed to match or mix to keep the same color or he is just trying something new. Also (not in the case of these) some shoes have been faded so much that when he is done with them they appear darker but they are actually restored.

Why don't you leave the soap on these shoes for too long? Is it the colour, or the leather or other stuff?
You don't necessarily have to leave the soap on any shoes for long. Most likely reason for these is because they are light colored and the longer you let the water soak in the longer it will need to dry to the original color, which would not work for the burnish or the video. Its a common thing for shoe shiners to do a quick scrub and wipe because they don't have the time to let a shoe dry to continue to work.
