  • In this video I show you how to forage for wild elderberries. I give you several great tips for harvesting and eating these delicious berries. Like many wild edibles, elderberries contain trace amounts of toxins. I also explain how to get around this and stay safe. Omg thank you! I am so glad I found this video. I made elderberry syrup with that same exact juicer you have. I haven't found anybody else using a juicer, so I started having heart palpations and was scared I extracted too much cyanide from crushing the seeds. I will start taking less syrup than I did the first day and hopefully that will stop any side effects.

one thing i read online was if you are not sure if a wild thing is toxic to leave one piece on your tongue for 5 or 10 mins to see if there are any reactions. imagine the trial and error our ancestors experienced trying to find medicine in the wild.

I found similar berries that are dark purple, but grow inside fences, not on a tall tree. They look like black currants or aronia, but ripen in late autumn and are smaller. I was starving and thirsty and they tasted ok then. But later I found they had a very strong aftertaste. I'd have to force myself to eat an excessive amount. And they require sugar and dilution with water.
The cyanide in fruit is over exagerrated. I ate crushed cherry pits, and got nothing. I crushed these berries in a blender very lightly to avoid oxidation and froze them in a jar. This conserves freezer space. I used a shallow jar, and it didn't break.

I realize you are probably a proponent of eating raw, but cooking of elderberries greatly reduces toxins. I also use them medicinally in syrup as a cold/flu preventative or remedy and in jelly and I've never had any problems. They are very high in Vitamin C.

He only covered the elderberries found in the west coast of the US. North American elderberries are native to the east coast and midwest. There is a common variety in Europe as well. Check this list: plants.usda.gov/java/ClassificationServlet?source=profile&symbol=SAMBU&display=31

  • @mtnmanrab

It's the seeds that make you sick. If you strain out the seeds you can eat the raw berries without bad effect or suck the juice out of them and spit out the seeds.
Otherwise you must cook them with the seeds to not get sick. I too consider them medicinal raw but cooked, they are great, as jelly, jam and sugar crust pie, yum, yum.

Надеюсь, что синего. А если вдруг они окажутся красными, то их вообще лучше не сеть или есть еще меньше, чем синих? Спаси Бог.

The blue elderberries that he refers to and show in the vid are native to the Pacific Northwest (Sambucus Caerulea). He fails to mention that the native elderberry to the remainder of the North American continent are the commonly known American Elderberry (Sambucus canadensis) a dark blue to purple berry, and the elderberry native to Europe, the European or Black Elderberry (Sambucus nigra). Botanists consider all three plants to be related. There are other varieties as well. Additionally, most practitioners who consume elderberries advise gently boiling the fruit for 20 minutes as boiling will neutralize the toxins present in the berry or stems the berry is attached to. I would consider this video to be a bit irresponsible with respect to the consumption aspect of the fruit.
