Shouldn't this start with a proton transfer because water is a weak nucleophile?

I was going to comment the same thing. I was taught that the H2O is a weak nucleophile so we have to make the carbonyl more electrophilic first.

Wrong mechanism with hydration you need acid catalysis protonating thee carbonyl , water is a poor nucleophile compared to amines.
