    The soup without the pesto and cheese looks wonderful for those of us under the weather.. I am a terminal cancer patient and do not have much appetite but that looks delicious....

    Soup and Chowders and stews are great in the Summer especially on the Shore when the Nights get cool and the Fog rolls in.

    Love this light soup. I would add some white beans for a substance meal to fill my belly. 😋

      I did too, as well as 3 fresh campari tomatoes, a handful of alphabet pasta instead of rice and a pat of butter to finish

    This sounds fantastic! I’ve been looking for a spring/summer soup other than a gazpacho. I’ve worked very hard and lost about 130 lbs over the last 3 years by focusing on balanced nutrition rather than a particular diet. I have rare health issues and I take a lot of medications. My tastebuds are often messed up and it’s hit or miss if I am able to tolerate different meats. This minestrone sounds perfect!!! Thank you so much!!

    When I make soup sometimes, I let the cobs cool off some and I squeeze cobs to get the juice out. Don't won't to loose flavor.

    Never put stones in the bottom of a pot. Put drainage holes instead.
