To be totally honest, sometimes I find food theory to be more intertaining than matpat's other channels just because not only is it one of the most relatable because well, it's literally about FOOD, but also because it tends to be the most light-hearted of all. My great grandfather met the owner of chic fil a when he was setting up a new shop in a brand new mall. This was when chic fil a was a fairly new place. If I remember right, my great grandpa saw him setting up and asked if he needed help. Afterwards the owner cooked him some lunch and talked to him for a while. This was on a Sunday. This makes my great grandpa one of the few if not only person to be served chic fil a on a sunday
10-15 years ago Wendy's had the best Spicy Chicken sandwich. The patties were thick & juicy but then I noticed the patties started to get smaller & not so juicy. I still order one every now & again but it's not the same. Screw corporate budget cuts.

As a person who forgets to feed myself often, the ability to walk down to Burger King and get 1200 calories in a sandwich meal has honesty really really been a lifesaver sometimes. When I haven’t eaten in 20 hours, the ability to get 20 hours worth of calories in one sandwich is helpful, lol.
I just want to say, as a long time Arby’s employee, we don’t really count. We just renamed the same sandwich we’ve been selling for years, unlike some of our competitors like BK who came out with something new.
Which is pretty sad considering their chicken sandwich is very much a last place bottom tier chicken, I got it once and never again, they are one of the few places offering buffalo chicken though so points for that.

As someone who fries my own chicken on occasion and has made my own sandwiches, no I'm not surprised by the amount of breading. Most breaded fried foods have a LOT of breading. Especially when you want flavor and texture. The fact it's relatively cheap helps.
Yeah there are some places that serve chicken Fried and I find myself actually pulling off pieces of breading because there's so much of it in some places like grocery chains actually have more breading than chicken and it's not even worth getting them.
Also, most of these chains have had fried chicken sandwiches for years (if not decades). The difference is that the recent chicken sandwich wars have involved *southern style* chicken sandwiches, in many cases replacing the previous (dare I call them 'classic'?) versions.
@@Beliserius1I would say that there's also a tendency for southern-style chicken to be spicier. Part of the appeal of nuggets and non-southern-style breaded chicken is a milder flavour, which is one of the reasons it's often a safe food for picky eaters and kids

The packaging discussion got me thinking maybe MatPat will do a "best way to pack your lunch" theory? Especially for sandwiches... what's the best way to keep your buns dry and veggies crisp for hours? I also think a tuna/egg salad sandwich (rather than a chicken sandwich) should be considered to determine how to stack your sandwich to minimize sogginess.
For egg/tuna salad sandwiches put a leaf of lettuce on each side this prevents the saucy inwards from turning your bread into a soggy mess by lunch while also providing a crunch for a more satisfying sandwich. For your veggies put them in a little sealable bowl like container filled with ice water this chills them which slows down them degrading from heat while also keeping them underwater away from oxygen that degrades them quickly as well.
When I was like 6 years old KFC's basic chicken sandwich had tomatoes chicken lettuce tomatoes it was so good and it was like 3 dollars. Now something of that quality would be considered "deluxe" and would run you 6 bucks. The basic models are just pickles and mayo. At McDonald's I don't even get mayo its just pickles and chicken in a bun its so sad

There are measures one can take to "reset" without too much collateral, or in cases of booms it could happen naturally, but the main issue is that you can't compare today's economy to the prices of prior economies without adjusting for inflation and income increases. In general, though income inequality remains a growing issue, the US has experienced constant and steady inflation that is usually on par with or outpaced by the growth of income due to said inflation, so it's not completely fair to compare a chicken sandwich from the early 2000s to one today in price, because when adjusted for inflation they come out fairly similar. Though that said, it is true that over the prices have begun to creep up noticeably past what you could've gotten a decade prior for the same value of money, and the pandemic certainly didn't/doesn't help.
The fact that Chic-fil-A's sandwich has More chicken and Fewer calories, ought to set it apart. Fewer calories doesn't necessarily mean less food. Notice how many restaurants advertise lower calories in their food, while none brag about having more.

Heat a pan with a light amount of oil(olive is my preference) until a drop of water sizzles in the pan, and toss in the fries. After tossing the fries in the pan with a spatula for a few minutes serve and eat.
Depends on the fries. Air fryer is good for traditional fast food fries. But, in my opinion, for steak fries, like from Red Robin or Friday's, you cannot beat sauteing them.
Oven or air fryer my friend. Never use a microwave to do that. Quicker sure but stale and bland all the more so. If you're not in a rush oven is the way to go.
as a former* wendy's employee, I can say that calling the classic chicken sandwich a "new sandwich" is a bit of a technicality because all we did was add pickles. that's it. every other part of it is the same. just two thin pickle slices.
currently working at mcdonalds in the uk and always wondered why the mccrispy and mcspicy became permanent options over here. now knowing that there is a chicken sandwich war going on, it’s all too clear. it’s become lucrative business to sell these sandwiches so making these menu items permanent makes SO much sense. still wouldn’t get either, even on breaks when they are free for staff (they taste foul i’m sorry. quarter pounder is the go to imo).

Glad someone else agrees. Some people want the chicken to be so crispy that you're basically eating chalk. Those middle/lower tier crispy sandwiches do an excellent job balancing the crispy texture while not ruining the tenderness either.
The best chicken sandwich I have ever had and ever will have will be the popeyes spicy chicken sandwich. The first time I ate one I had an actual tear in my eye it was so good. The chicken to bread ratio was good the the spicy mayo is amazing and the small bit of sweetness from the buns were a perfect combo a real 10/10
Literally the only reason I ever go to Sonic is for the drinks. I may occasionally grab a footlong Coney while I'm there, but I go there for the drinks.

Jack in the box is big in their area but completly absent in others. Since its so big in their region, and for some reason it has a cult following, they are probably bit bias in that direction. The clostest one to me is over 500 miles away so not really a national brand just a regional one.
I prefer grilled chicken over fried which is a big part of why I rarely order chicken sandwiches. That said I have had Chic-Fil-A a few times and while I found their chicken to be good, probably the best quality fast food chicken, I found the sandwiches as a whole to be a bit plain. Probably the best choice from a health standpoint.

Know what's funny? I live in KY, and KFC here fucking sucks as compared to every other state. Several times a week the one in my town is out of chicken and only selling sides, and if you do get chicken it's soggy from sitting too long. Go to Tennessee and they still have the buffets and it's as good as my own cooking.

The environmental thing is a surprisingly big thing- beef is the second worst for the environement(after lamb), and is 10x worse than pork. Meanwhile, poultry has the least impact on the environment for meat 😳

I honestly doubt that corporations have environmental impact, and religion in mind, I can see a couple doing so but the vast majority of those chains are more than likely jumping on the chicken wagon because they saw their window. They were most likely avoiding chicken sandwiches because competition would reduce sales for both parties mostly affecting the new comer but when they saw Popeyes they realized that there was a market that was mostly uncontested. Another likely reason is that chicken is cheaper EDIT* I would like to address that moderation is still a thing we should go for, yeah chicken is better but if we consume chicken like we do beef we'll start seeing more zombified chickens as producers try to meet demand

After adding all the brownie goodness, cookie dough bits, and cheesecake chunks, the Blizzard is mixed one final time to add even more air and increase the overall adhesion. Dq has air in their ice cream and the volume is a certain ratio so that way it won't fall as well. Honestly Its possible with custard because its thickness. Also DQ Ice cream isn't actually ice cream according to the FDA. According to the FAQ section, DQ soft serve is technically classified as "ice milk." The Food and Drug Administration (FDA) requires a minimum 10% butterfat content in ice cream, but DQ soft serve only has a 5% content.

I feel like the crispiness test is more likely to test surface roughness than truly measure crispiness (although there might be correlation between those); measuring decibels when you bite into it seems like a way better method to determine crispiness
I agree. From the sound of it DQ is just kind of "rough". Crispness involves breaking off easily not just proving resistant. I want to hear reasons why Popeyes isn't best but I can't think of any and I haven't seen any so 🤷
I mean the problem with measuring when you bite into it is the amount of time to get the sample of the sound produced would only last for a fraction of a second and then the sounds would be muffled by the "biter's" mouth. I feel like measuring crispness is just a really hard metric to grasp.

I miss the discontinued mcdonalds artisan crispy chicken from a couple years ago, it was delicious. Just recently tried their new deluxe crispy chicken, and it was awful. Especially the bun.
I fee like getting the batter and putting force on it untill it breaks and measureing the sound then will give a better result of crispyness for a few reasons, the main on being that it takes away the variable of force of using the plastic fork equally.

As a person who forgets to feed myself often, the ability to walk down to Burger King and get 1200 calories in a sandwich meal has honesty really really been a lifesaver sometimes. When I haven’t eaten in 20 hours, the ability to get 20 hours worth of calories in one sandwich is helpful, lol.

I just want to say, as a long time Arby’s employee, we don’t really count. We just renamed the same sandwich we’ve been selling for years, unlike some of our competitors like BK who came out with something new.
Which is pretty sad considering their chicken sandwich is very much a last place bottom tier chicken, I got it once and never again, they are one of the few places offering buffalo chicken though so points for that.

As someone who fries my own chicken on occasion and has made my own sandwiches, no I'm not surprised by the amount of breading. Most breaded fried foods have a LOT of breading. Especially when you want flavor and texture. The fact it's relatively cheap helps.
Yeah there are some places that serve chicken Fried and I find myself actually pulling off pieces of breading because there's so much of it in some places like grocery chains actually have more breading than chicken and it's not even worth getting them.
I remember trying KFC years ago, and noting it was like half breading. And hey, it's 8th (so high) on the charts here.
Also, most of these chains have had fried chicken sandwiches for years (if not decades). The difference is that the recent chicken sandwich wars have involved *southern style* chicken sandwiches, in many cases replacing the previous (dare I call them 'classic'?) versions.

This episode was made for me. I survived a whole summer on Popeye's chicken sandwich while mowing at a golf course. Never ate popeyes so much until I tried their sandwich, so I immediately knew theirs would win when I saw this thumbnail

The packaging discussion got me thinking maybe MatPat will do a "best way to pack your lunch" theory? Especially for sandwiches... what's the best way to keep your buns dry and veggies crisp for hours? I also think a tuna/egg salad sandwich (rather than a chicken sandwich) should be considered to determine how to stack your sandwich to minimize sogginess.
For egg/tuna salad sandwiches put a leaf of lettuce on each side this prevents the saucy inwards from turning your bread into a soggy mess by lunch while also providing a crunch for a more satisfying sandwich. For your veggies put them in a little sealable bowl like container filled with ice water this chills them which slows down them degrading from heat while also keeping them underwater away from oxygen that degrades them quickly as well.

When I was like 6 years old KFC's basic chicken sandwich had tomatoes chicken lettuce tomatoes it was so good and it was like 3 dollars. Now something of that quality would be considered "deluxe" and would run you 6 bucks. The basic models are just pickles and mayo. The fact that Chic-fil-A's sandwich has More chicken and Fewer calories, ought to set it apart. Fewer calories doesn't necessarily mean less food. Notice how many restaurants advertise lower calories in their food, while none brag about having more.

Heat a pan with a light amount of oil(olive is my preference) until a drop of water sizzles in the pan, and toss in the fries. After tossing the fries in the pan with a spatula for a few minutes serve and eat.
Depends on the fries. Air fryer is good for traditional fast food fries. But, in my opinion, for steak fries, like from Red Robin or Friday's, you cannot beat sauteing them.
Oven or air fryer my friend. Never use a microwave to do that. Quicker sure but stale and bland all the more so. If you're not in a rush oven is the way to go.

as a former* wendy's employee, I can say that calling the classic chicken sandwich a "new sandwich" is a bit of a technicality because all we did was add pickles. that's it. every other part of it is the same. just two thin pickle slices.
currently working at mcdonalds in the uk and always wondered why the mccrispy and mcspicy became permanent options over here. now knowing that there is a chicken sandwich war going on, it’s all too clear. it’s become lucrative business to sell these sandwiches so making these menu items permanent makes SO much sense. still wouldn’t get either, even on breaks when they are free for staff (they taste foul i’m sorry. quarter pounder is the go to imo).

The best chicken sandwich I have ever had and ever will have will be the popeyes spicy chicken sandwich. The first time I ate one I had an actual tear in my eye it was so good. The chicken to bread ratio was good the the spicy mayo is amazing and the small bit of sweetness from the buns were a perfect combo a real 10/10

I was in Florida back in Aoril and had Zaxbys and I'd probably give my left arm (useless from a stroke as it is) to have Zaxbys up north where I'm located (Maryland)
Jack in the box is big in their area but completly absent in others. Since its so big in their region, and for some reason it has a cult following, they are probably bit bias in that direction. The clostest one to me is over 500 miles away so not really a national brand just a regional one.

I prefer grilled chicken over fried which is a big part of why I rarely order chicken sandwiches. That said I have had Chic-Fil-A a few times and while I found their chicken to be good, probably the best quality fast food chicken, I found the sandwiches as a whole to be a bit plain. Probably the best choice from a health standpoint.

Know what's funny? I live in KY, and KFC here fucking sucks as compared to every other state. Several times a week the one in my town is out of chicken and only selling sides, and if you do get chicken it's soggy from sitting too long. Go to Tennessee and they still have the buffets and it's as good as my own cooking.

Yeah, pretty much. They've been cost cutting while increasing prices for a while now. No more homestyle fries, lackluster buns, and overly complicated cookies. I used to enjoy Arby's chicken sandwiches (classic, bacon, and gordon bleu) but there's not much going for it now.

I think the biggest thing is because a lot of people just don’t prefer to eat beef, either for environmental or religious reasons, and so it’s only natural for them to do it as they expand into more counties
The environmental thing is a surprisingly big thing- beef is the second worst for the environement(after lamb), and is 10x worse than pork. Meanwhile, poultry has the least impact on the environment for meat 😳

Honestly I lost the taste for beef a while ago. On a burger or "sandwich" I much prefer chicken cause it has cronch and I like cronch.
I honestly doubt that corporations have environmental impact, and religion in mind, I can see a couple doing so but the vast majority of those chains are more than likely jumping on the chicken wagon because they saw their window. They were most likely avoiding chicken sandwiches because competition would reduce sales for both parties mostly affecting the new comer but when they saw Popeyes they realized that there was a market that was mostly uncontested. Another likely reason is that chicken is cheaper
EDIT* I would like to address that moderation is still a thing we should go for, yeah chicken is better but if we consume chicken like we do beef we'll start seeing more zombified chickens as producers try to meet demand

Viscosity measures the fluidity of a substance. Something like water, which pours no problem, has a low viscosity. Things like ketchup and molasses have a high viscosity because they are resistant to flow. DQ soft serve has a high viscosity because the emulsifiers, ingredients that stop the soft serve from separating into separate components, hold onto the introduced air. the air also makes the blizzards melt faster.
After adding all the brownie goodness, cookie dough bits, and cheesecake chunks, the Blizzard is mixed one final time to add even more air and increase the overall adhesion.
Dq has air in their ice cream and the volume is a certain ratio so that way it won't fall as well.

Well there is a distinction - a chicken burger could be a patty made from minced chicken, whereas a chicken sandwich is always going to be a piece of breaded chicken.
Burger means ground or minced, if you were just to put a slab of beef on bread, it’s not a burger, it’s a steak sandwich.

I feel like the crispiness test is more likely to test surface roughness than truly measure crispiness (although there might be correlation between those); measuring decibels when you bite into it seems like a way better method to determine crispiness
I agree. From the sound of it DQ is just kind of "rough". Crispness involves breaking off easily not just proving resistant. I want to hear reasons why Popeyes isn't best but I can't think of any and I haven't seen any so 🤷
I mean the problem with measuring when you bite into it is the amount of time to get the sample of the sound produced would only last for a fraction of a second and then the sounds would be muffled by the "biter's" mouth. I feel like measuring crispness is just a really hard metric to grasp.
And you've got to factor in that rubbing the crust with a fork isn't a standardised test. Using more force on the same crust could result in more decibels.

I miss the discontinued mcdonalds artisan crispy chicken from a couple years ago, it was delicious. Just recently tried their new deluxe crispy chicken, and it was awful. Especially the bun.
