I don't think that enough people can do a whittling knife comparison like you have done here & it be called to many !!! as time goes on I hope that more folks in our arena of using a folding knife for whittling / woodcarving will step forward & share what they use & like best , because personal tastes can vary so widely in manufacture , handle length , number & style of blades & handle material choices , etc. !!!
GEC pocket carver is Awsome! Flexcut carving jack, is more to bit you with all those blades then a normal pocket knive. The sarge is more suitable for chip carving, at least, that is my experience with it. Mora always good! Easy to sharpen. I don't own a Opinel. I did, but I really don't like them. No to look at and not to hold in my hand. Rough rider knives are cheap, but Awsome! Victorinox recruit and small tinker are great, after you reshape the small blade. Think I'm going to get a Stanley soon.
Ive never changed the blade in my stanley either. I am temped to get some to create different profiles to try out though. Then I could carry them in a tube for a compact travel kit, but Id likely just get another handle or 2 and carry them together. I have a few butz (not that one though) and i love them. I use an opinel a lot but not for any detail, its just too big and you cant choke up much. #6 is the smallest one that locks. agreed on swiss army, good stainless option, but convex edge helps keep it thicker behind the edge for strength of the softer nickel alloy. I love my old timer 3 blade my grandpa gave me, Its a great carver and goes with my carving kits. Good comparison video.
