  • What an Awesome find!!! 3 flushes in one day! Find Clean Cook chicken of the woods - This recipe is tasty and easy to make. Identifying - cooking and utilizing chicken of the woods mushrooms is really not that hard. Cooking Laetiporus Sulphureus, chicken of the woods, sulphur shelf and the chicken mushroom... it's all the same just different names, so check out one of my favorite way to cook this mushroom.

    Ive heard a lot about chicken of the woods, but unfortunately I haven't had the opportunity to try it yet. I've been mostly vegan for a little over 3 years now and always looking for new food. The main thing I miss about meat is fried chicken so I'm definitely going "hunting" as soon as I can. Thank you for sharing 😊

      That's awesome! Keep in mind the 1st time you try any wild mushroom only eat a little and wait roughly an hour or so to ensure you have no allergic reaction. If not... then your going to enjoy cooking it this way. Thanks for watching and happy hunting to ya!!!

    Great recipe! Yummy.....Another recipe I've made is onion and garlic, shallots and, believe it or not, pineapple (adds moisture and sweetness) over penne pasta. The pineapple is a great addition to Chicken of the Woods!

    Looked great! Im vegetarian for 5 years & almost full vegan for 6 months. I definitely want to make that but with an egg substitute. Wow it looks like your giving popeyes famous chicken sandwich a run for their money!

      @@WildMeatLetsEat I finally found some Chicken of the woods! I harvested a small amount (after a positive ID with some one who knows mushrooms) and breaded it with panko bread crumbs. It may be the best tasting thing I have ever put in my mouth. Thanks for the video it inspired me to try something new.

    What a fantastic vid on Chicken of the Woods (COTW)!
    I'm also lucky enough to live where these beauties pop up:
    Cape Town, South Africa ...and Laetiporus Sulph. (together with other closely related polypores) made its way over here from Europe, Australia and the Americas in the soil, bark, roots, twigs and live saplings of Oak, Pine, Eucalyptus and other tree's...over 350 years ago!
    My kids and I struck an absolute jackpot this season: 13.5kg (nearly 30lbs) off of just one Oak tree! I would like to send you the pics!
    I haven't posted any vids on RUclips...you have... and you thus know much more about putting great footage together and publishing it successfully....if you would allow me though, may I suggest something:
    Is it possible to put a written warning (on which Laetiporus flushes to avoid / take note of adverse gastric and other reactions in some individuals!) at the BEGINNING of your vid, and maybe mention it at the start too?
    You and I know that one simply does not chance it when it comes to mushrooms, but some RUclips watchers might not be as aware of the possibility of making fatal mistakes / sickening errors in judgement?! I'm not criticizing, merely suggesting...
    I find COTW fascinating:
    - It's a saprophyte - actually, it is the pathogen that firstly lived off of the living tree (while it's mycelium made it's way to the core of the tree, infecting it, causing heart-rot: the death of the tree comes over time...), so it is a parasite too...
    - An infected forest is heaven on earth for us foragers, but a nightmare for plantation owners...it kills their trees.

    PS:
    After having said all of that:
    I have stuck to the rule of not eating Laetiporus growing from a host other than Oaks or Poplars, however I might experiment with a tiny amount in the future, as RUclipsrs from Australia and other countries eat them from a wider variety of hosts.

I have other videos on which Laetiporus flushes to avoid... really more like what trees to avoid... maybe I'll do one a lot more in depth on laetiporus conifericola, laetiporus gilbertsonii, laetiporus huroniensis or laetiporus persicinus.       @@madelynt1615 so sorry to hear that. Let's backup... are you 100% sure it's chicken or the woods... what kind of tree did it come from? Was it a fresh specimen? Assuming it was did you use any seasoning... like salt/pepper or any fried chicken seasoning. I'm really not sure what you did wrong, usually when I fry the mushrooms it encapsulates the juices and it's not dry at all.

      @@WildMeatLetsEat Yeah im sure its chicken of the woods. Its bright yellow on the bottom, light orange on top, and it grew in a big cluster. It was on a dead oak tree, im sure. I did not use any seasoning

    Ok so I was going to make the sandwich but I wanted to taste the difference between just frying in butter and onion versus breading and frying them.
    Definitely the breaded ones were so much better. It is a toss up which is my favorite Morels or chicken of the woods. I now want to bread and fry Morels. 🍷

      Absolutely frying the chicken is better!! However... with morels I like them with garlic, butter and a little Himalayan salt ... that's it! Some people say breaded/fried is better but not me. You should definitely try it both ways.

    I go mushroom hunting on my pony or mule a lot so I have to use plastic bags & place mushrooms in my backpack or saddle bags, it works but I wonder if there is a better way, I don't think the mesh bags would work for me using my equines for travel

      Maybe a paper bag... this allows the mushroom to breath without the moisture buildup. Paper bags are also a great way to store the mushrooms in the fridge overnight. Strawberry containers work great as well... it's really all about allowing the mushroom to breath. I know a few people who put the strawberry containers in there backpack while hiking, maybe this could work for you. Hope that helps and thanks for watching!!!

      Yes that's true... however the weather has to be perfect to ensure they keep growing. I've got other videos where I only cut the outside margins. It really depends on the shape of the mushroom and how you're going to utilize it. Good observation and thanks for watching!

      @@WildMeatLetsEat Thanks, and yes there is trout fishing in Germany. Though catching them on wild waters is challenging in my area, there are a lot of trout ponds as well, which are stocked (we call them "forellenpuff" in German (Trout Brothels) haha, since it's normally not a huge challenge to catch them in stocked lakes. So I usually just go to those when I want to target trout and run my smoker. I will sub you from my cooking channel "alchemy kitchen" as well, mushroom season here was one of the best I have seen this fall, so also doing a lot of recipes with wild mushrooms.

    I'm new to foraging and I love it! Your video's are so informative.
    I live in Michigan and this afternoon while foraging with my neibor we found some reishi! We were so excited I came home and brewed some awesome tea.
    Where are you located? Wondering if your eco system and climate are similar to mine. I'm in southern Mi near the Indiana border btw.

My elevation is roughly 3200... so even though I'm further south it's a lot cooler... it's probable not that far apart in the spring, summer and fall. It would be interesting to know for sure...     Hello. I live in a small town in northern Ontario Canada. As per the information I have from my book Mushrooms of Ontario and Eastern Canada it looks like it is easy to find but because of our colder climate they are rare, but just recently I found a nub no bigger then 3". I highly suspect it is COTW as the color is white to a light yellowish. It's located in a very old growth forest, very sheltered and if it wasn't for my thinking of "what looks outta place" I wouldn't know. I have pictures and would very much like a second opinion. I feel that until it gets warmer here it is only slowly growing. I also took what looks like old growth from last year and although it's old it still retains features of COTW. Please let me know as this could be one of my best finds here. Thanks for reading. Hoping to hear back from you.

      I've never heard of anyone finding them in Louisiana however, I know people who have found them in Texas and Florida... so I would think they're there. It's not always an easy mushroom to find. It may take a whole season (spring, summer and fall) before you find one. When you do... pay close attention to the environment, trees, terrain and weather conditions and hunt those type of areas at that time of year. Hope that helps and thanks for watching!!!

    Couldn't help but notice that from 3:20 - 3:24 there was some more bright orange fungi over your shoulder. Chantrelles maybe or possibly the jack o' lantern. Did you happen to check them out?

    Im in Nashville or South of there and I wish I could find some and cook it up. I went out in the Spring looking for Morels and came home with a couple passengers wearing bandannas. Anyway, needless to say, my luck no morels but a bad case of Lyme disease. Really bad year for me with the Covid out here, just trying to find things to do without being very social. Now, I am just afraid to go out but I still want to. Can you tell me when they might be popping in this area? Have you found any this year 2021? God Bless You and Good For You!!!

      C.O.W only fruits in spring, summer and fall. I would continue to look until roughly the end of September... depending on the weather. It's been way to dry for me this summer, not much rain at all. No rain... no mushrooms. If you go out 3 or 4 days after a good day of rain, it should increase your odds.       Thanks! These mushrooms don't last long in my house... If I want to save some chicken then I just saute a batch and freeze. Keep in mind you'll only get a month or two this way but defiantly sauteed 1st is the best method I've found. How long will they stay? If you're asking how long will a flush last on a tree... that really depends on the weather and the age of the mushroom when you found it... but roughly one to three weeks.     what trees are best for collecting chicken of the woods from...? I want to make sure that I always go with only the safest bet when it comes to what tree is not going to make it dangerous to eat, so I'd like to know for sure what trees are safest.

      It should have a mushroomy smell... it's hard to describe the bad smell. But you'll know when you smell it. I thought to myself I shouldn't be cooking this or eating it. Not a good smell at all! Hope that helps and thanks for watching!

    How did you tell that stump was an oak tree stump? I read that Chicken of the Woods can hurt your stomach if it grows on certain decomposing trees?

    Hi there... love your videos... I found a huge one today and wanted to know how to process them, wash/no wash? Keep all/keep only the tips of them? How long?
    They did have some bugs but not rotten.

      I like to dry brush them... never soak. You need to remove all the tough parts of the mushroom... just cut off the outer margins, roughly two inches. Thats the part you'll want to eat. If you never have eaten this mushroom... start slow. Eat a few bites and wait roughly 45 to 1 hour to ensure it agrees with your system. You mentioned bugs... once you cut the outer margins, check the cuts for worm holes. If you find a worm hole continue to cut until you don't see them. You can save the mushroom for a day or two but I wouldn't go longer than that. Hope that helps and thanks for watching!!!

    With the amount of mushrooms you get, how do you recommend storing them? How long do they keep in the fridge or freezer?

      You can freeze them but I would recommend sauteing them 1st... they can last a few months however I have a family of 5... so they typically don't last long and they taste much better fresh (the day you harvest). If you have a vacuum pack... that will add some weeks to the storage life but typically a few months is all I do. Hope that helps and thanks for watching!!!

    Can you advise if chicken of the wood will grow in same place that you have found in the past and if will be about same time of year places I found them last year I am not seeing thanks

      Yes it can come back year after year but not always the same time of year... a lot depends on the weather... temps. and amount of rain play a big roll in the fruiting.     Just came back from a guided tour with a certified expert. And we where able to harvest a lot! Just found out that you can dry 'em. So I just put a fair share in my dehydrator.
    But about the taste or smell: this is IMPORTANT!
    We havestet from a willow. Said to taste best. A woman in our group said she had some from an oak tree. And it tasted somewhat bitter. That is just about the taste.
    BUT: never harvest from a tree that is barbed! These guys might very well be toxic!
    Like harvesting oyster mushrooms: a friend gave me a huge log with them on. And I asked him, what kinda tree this was from.
    It was laburnum!! They are toxic! 'Cause of the tree they grew on.
    My only chance: if they appear again this year: but that log on top of some non toxic logs and hope for the spores to invade them.

      Fantastic comment... yes everyone should take it slow and pay attention to the tree they are harvesting from... this true with all wild mushrooms (slow down). I now only harvest from oaks and have never experienced a bitter taste... I guess it depends on what part of the mushroom you're eating. Thanks for watching and happy hunting to ya!!

      Bugs crawling on the mushroom or did you see something equal to a fruit fly? Bugs crawling typically are not a problem but the flies are another story... if you have time checkout this video...       Roughly 2 to 4 minutes... depending on the size of the cuts and the thickness of the mushroom. Just look for that golden brown color and you should be good to go.     Great video! I just found a log covered with a ton of young flushes today on May 22nd 2020 of all days. I harvested only some of it and plan on going back for more. There quite a few beetles in it so I had to soak for a few. What is the best way to preserve these. I don't have a dehydrator yet and currently have them wet in a Tupperware container in front of my window with the lid off. Been there for 30 minutes.

      Nice find! Without a dehydrator... I would saute then freeze in a freezer lock bag. It should last roughly a month. That's the only way I store them... with my family of 5 they don't last long! Hope that helps and thanks for watching!!

    Sooo.. does anything ELSE look like it? Can I make a mistake? And... how do I know what types of trees are good. You mentioned in an earlier video. Moisture is good, but not drooping.. and watch for mold and bugs... right?

      When it comes to chicken of the woods or COW there's really not any look alikes... Some might say the jack o lantern but that's a gilled mushroom and COW is a polypore. You can make a mistake if you go outside the key features of COW however COW is super easy to identify and is a great beginner mushroom. Just take it slow at first... if you find some just take pictures and do your homework... make 100% sure you have COW before eating. If you only look on oak trees you'll be fine. Red oaks and white oaks are what I focus on... I would watch my playlist on COW... that might give you little more insight. If you do find some and chose to try it, just try a little at 1st and wait 45 minute to see if your system agrees with the mushroom. A small number of people have reported an upset stomach after eating... I have a family of 5, all of them love this mushroom and have never any problems. I hope that helps and thanks for watching!!!

    Have you found that they grow more in upland areas versus lowland ? Can they be found on slopes? I've looked in a variety of places without a whole lot of luck, both in mixed woods and in hickory/oak glades. I did find one this year, sort of a fluke, right where a big tree had fallen next to a trail.

      I haven't found any difference in growth in upland vs. lowland and the 1st two flush in this video were at the bottom of a mountain but the 3rd. flush was on the side slope near the top. Almost a 900 ft. difference in elevation on the same day. Continue to look at damaged oaks this time of year... August through October or later but are sometimes found as early as June and they really don't need that much rain to fruit. The real trick is spending as much time as possible in the woods at the right time of year. Hope this helps and happy hunting!!

    I harvested chicken of the woods from several locations in the woods today and noticed some pieces had a metallic taste. Does anyone know if that was because some were from conifers?

      I was taught that you should not eat chicken of the woods if found on a conifer... but I know plenty of people who have eaten it with no problems. However when I tried it... it was not good. Could the metallic taste come from the conifer... maybe. Sometimes you can get a metallic like taste when the mushroom is under cooked... so maybe you had a few under cooked pieces? It's hard to say what made it taste that way but you should be okay as long as it didn't come with GI issues. Mushrooms are known to remove heavy metals from the air but I've never heard of it effecting the taste... assuming you found these mushroom's in a pristine environment I would think it was just under cooked.       @@WildMeatLetsEat Thanks for answering my question, I love your videos btw. They were harvested from a well maintained patch of woods. I went back and looked but all of the logs were mossy and difficult to identify, possibly Elms. I didn't end up having any GI issues so I'm guessing I undercooked the fatter slices. I didn't know undercooking caused a metallic taste so thanks for that info. I'll definitely be more wary of conifers in the future. 👍

    What does the off smell smell like? I have some and it smells like all mushrooms smell.

      A mushroom smell is good... it only smelled bad when I cooked it. It's hard to describe the bad smell but I feel confident you'll know when you smell it. When you cook it... it should smell pleasant. Congrats on finding a flush and thanks for watching!!!

      It taste a little like chicken but with a mushroom flair. However it's a fantastic substitute for chicken... not only for the taste but also the texture. If I had to choose... I'd probably pick real chicken but don't get me wrong... Chicken of the woods is really good! Thanks for watching and happy hunting to ya!!
