SPINACH SOUP | Creamy soup made from fresh OR frozen spinach

  • Creamy spinach soup is a simple soup that you can prepare from fresh or frozen spinach. If you use fresh spinach, use 1 kg of fresh leaves, and if you use frozen spinach, 500 grams will be enough. There is no need to thicken the soup, just add potatoes to the base and the starch will thicken the soup beautifully. I serve spinach soup with cream with a poached egg.
    INGREDIENTS
    500 g frozen spinach (1 kg fresh)
    1 white onion
    2 tbsp ghee/oil
    4 cloves of garlic
    1 liter of broth / water
    100-200 ml whipping cream
    2-3 medium potatoes
    4 eggs
    a pinch of nutmeg
    1 teaspoon of ground cumin
    some chives for garnish
