  • Growing our own staple crops was on the top of our priority list when it came to our 2020 gardening season. Many gardeners are focussed on growing fruits and vegetables that offer great variety and interest to one's diet but not so much in the way of calories. I felt that we mastered a large part of vegetable gardening over the last few years and that it was time to turn our calorie production up a notch. During our previous gardening seasons, we also did our fair share of trialing and testing various grains, tubers, and squash that had the potential to meet our calorie needs. One of the grain crops that we decided to double down on this summer was amaranth. Our current estimation is that each plant will produce 1/2 to 1 pound of grain at a spacing of 1 plant per square foot. Off of these rough estimates we are expecting to harvest 250 to 500 pounds of grain on a 10-foot by 50-foot plot.
