Just tap and hold the lockscreen until you see the customize option at the bottom! At least that's the way I'd do it on my iPhone, can't say about iPhone 7!
Am using the iPhone XS mas after changing my app icons this morning come this evening and they all became shortcuts to my music player all the apps I change the icon are now music player 😢 am I doing something wrong?

Do you mean delete the icons? If so you should just be able to hold them down like a normal app and press delete bookmark!
