초코 케이크 시트와 롤케이크 시트로 크리스마스에 어울리는 초콜릿 케이크를 만들었어요~
초콜릿을 듬뿍 넣은 버터크림을 샌드 했는데 맛이 정말 부드럽고 진한 초콜릿 맛이 나서 맛있더라구요~
아이싱 과정 없이 겉을 롤케이크 시트로 둘러 부담없이 만들 수 있는 것 같아요~
초코 생크림과 하얀 생크림으로 장식하고 빨간 장식을 올려 마무리하니 크리스마스 느낌도 가득 나더라구요~
2개의 케이크 시트가 살짝 식감이 달라 먹는 재미도 있었어요~
샌드한 크림이 버터크림이라 차갑게 굳혀 먹으면 더 맛있는 것 같아요~

▶재료
달걀 4개
설탕 100g
꿀 15g
바닐라익스트랙 5g
무염버터 35g
우유 55g
박력분 110g
코코아파우더 15g
무염버터 200g
슈가파우더 100g
코코아파우더 10g
녹인 다크초콜릿 100g
생크림 40g
달걀노른자 3개
설탕 20g
소금 1g
바닐라익스트랙 3g
우유 40g
식물성 오일 25g
박력분 45g
코코아파우더 10g
베이킹파우더 2g
달걀흰자 3개
설탕 50g
초코 생크림 (생크림 90g + 설탕 10g + 코코아파우더 7g)
생크림 (생크림 70g + 설탕 7g)
▶레시피
1. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 꿀, 바닐라익스트랙을 넣고 온도가 40도 정도가 될 때까지 저으며 섞는다.
2. 핸드믹서로 풍성한 아이보리색의 거품이 될 때까지 휘핑한 뒤 박력분, 코코아파우더를 체 쳐 넣고 섞는다.
3. 녹인 무염버터와 우유를 섞어 둔(온도 50~60도) 볼에 반죽의 조금을 덜어 넣고 섞고 본반죽에 넣고 섞은 뒤 18cm 틀에 붓고 기포정리를 한다.
4. 170도 예열한 오븐에서 35분 정도 굽고 식힌 뒤 윗면과 밑면을 자르고 3장으로 자르고 15cm로 잘라 준비한다.
5. 무염버터를 부드럽게 풀고 슈가파우더를 넣고 풍성해지도록 약 5분 정도 휘핑하고 코코아파우더를 넣고 휘핑한다.
6. 녹인 다크 초콜릿을 넣고 휘핑하고 생크림을 넣고 부드럽게 휘핑한 뒤 짤주머니에 담는다.
7. 15cm 틀에 시트 1장을 깔고 크림을 올린 뒤 다른 시트를 올린다. 1번 더 반복해 쌓는다.
8. 윗면의 크림을 평평하게 정리 하고 냉장실에 넣어둔다.
9. 달걀노른자에 설탕, 소금, 바닐라익스트랙을 넣고 섞고 우유와 식물성오일을 넣고 섞은 뒤 박력분, 코코아파우더, 베이킹파우더를 체 쳐 넣고 섞는다.
10. 달걀흰자를 휘핑하다가 큰 거품이 올라오면 설탕을 2번에 나눠 넣고 휘핑해 부드럽게 뿔이 서는 머랭을 만든다.
11. 머랭의 조금을 달걀 노른자 반죽에 넣고 섞은 뒤 섞은 반죽을 머랭에 붓고 섞는다.
12. 틀에 붓고 평평히 한 뒤 170도 예열한 오븐에서 17~20분 정도 굽는다.
13. 롤케이크 시트의 가장자리를 잘라내고 28cm x 8cm 크기 2장으로 자른다.
14. 케이크를 틀에서 꺼내고 위에 휘핑한 크림으로 장식한 뒤 롤케이크 시트에 남은 초콜릿 버터크림을 발라 케이크 옆면에 붙인다.

35g Unsalted butter
55g Milk
110g Cake flour
15g Cocoa powder
200g Unsalted butter
100g Powdered sugar
10g Cocoa powder
100g Melted dark chocolate
40g Heavy cream
3 Egg yolks
20g Sugar
1g Salt
3g Vanilla extract
40g Milk
25g Vegetable oil
45g Cake flour
10g Cocoa powder
2g Baking powder
3 Egg whites
50g Sugar
Chocolate whipped cream (90g heavy cream + 10g sugar + 7g cocoa powder)
Whipped cream (70g heavy cream + 7g sugar)
