The conversations in Star rail is loaded with jokes, slangs, and stories from the Chinese social media and probably give the translation team and non-Chinese voice actors a hard time. Naturally the Chinese CV can do much better with less efforts. Anyway, I strongly recommend at least trying the Chinese audio. I watched the stories in Genshin and Starrail in both Japanese and Chinese and it was fun.
