- Dam Pukht is a traditional dish which is being appreciated by almost all meat lovers, today I have brought you the same dam pukht in tandoor. This is closer to the Quetta Rosh recipe I made and this tatstes fabulous as well.

@@rajatnegi07literal meaning is " I begin in the name of Allah" any task one does small or big. Even getting up from a chair or stepping out bit the house or even opening a vessel lid seeking/being aware that Your creator has effect in everything good and every moment you are alive is good. It keeps you humble and connected with Allah.
I remember few years back in a TV interview the owner of the famous Karims Hotel was asked "what is the special about your cooking? What is your secret recipe that for decades people flock to your restaurant?" You know what his answer was? There is no secret!! We use the same ingredients used by every one else and similar technique nor is the recipe secret we just try our best and then close the lid and pray for Allah's help in the task. If people appreciate the food we are thankful to Allah. He didn't boast of using high quality ingredients, or using his grandfathers unique or secret recipe or his or his cooks skills but simply and humbly said we try what we can and if it turns out good it's a blessing from Allah. At one time this was the culture of most Muslims. Unfortunately this is rarely seen now but still ocasionally seen among pious people. This is not something artificial but they feel it from the heart. Famous journalist Kushwant Singh was frustrated with this attitude.decades back Indian airlines plane was hijacked. After a couple of days going from airport to airport facing death and finally Indian commandos stormed the plane and shot the hijackers. In their return to India at the plane door journalists asked how the passengers were feeling. Their answer was they were thankful to Allah that they returned safe. If course they praised the commandos etc. But first thing out of their mouths was they thanked Allah'. Kushwant Singh wrote in frustration that they should have thanked the commandos and all those involved in their rescue instead of Allah.
Imam Hussein after his whole family and friends were killled in Karbala and he was the last male to be killed. Injured in multiple places with fatal injuries he fell off his horse on the ground then raised himself up and prostrated to the ground and thanked Allah!!! The enemy who was next to him who killed him as he prostrated narrated this to his commander and then the king in a boast trying to be little Hussain helpless. But court recorders captured this testimony that even in great difficult facing near death a Muslim thanks Allah for his life.

This slow oven cooking technique is always one of my favourite. If i am not wrong this is associated with the reign of Nawab Asaf-ud-Daulah

You don't get heart burns because of those mix of spices in traditional dishes.
You only get the taste of the meat cooked in its own fat. And it tastes amazing. Try it with chicken (if you are a non veg). You will find the chicken recipe of dum pukht on YT.

Tried last night on my grand mother’s “Sipri” that she got herself during 1947 migration from Pakistan to India. I had modified this recipe by little olive oil instead of fat. Turned out to real good. Thanks for the recipe.
