Lard is not shortening, I do not know where you can buy it. Anyway, you can use butter instead.By the way, I do think the black sesame balls, will be good. I hope you can enjoy it. Thank you for watching

If you're in Mauritius,look forward in China town or hypermarket....you'll surely find them,it is called rice flour (with a green label for the glutenous one.) ;) Happy cooking!
Either vegetable oil or lard is fine. Generally, as long as you're using glutinous flour, it will be fluffy after frying. If you give it a little pressure when first frying it as shown in the video, it will be even fluffier. If the temperature is too high at the beginning, the outer crust will be too hard and prevent it from growing. Careful that you're using glutinous flour, not rice flour.

我今天试了这个方子,油炸蓬松的感觉有了,芝麻也很香,谢谢老师无私贡献! 但是我用开水烫的糯米粉好粘手,以至于又多加了些糯米粉,都还是有点粘手,是否我的水温度过高了?另外,炸出来煎堆也有点发苦,我确认用的是BAKING SODA,不知道是何原因阿?
忘记说了,我加了豆沙馅,是朋友自己做的,什么味道都没放的。

前5分钟温度一定要注意,100摄氏度,温度高了外皮就焦了 里面就无法蓬松了。

就像我前面回答你的,开始的时候油温一定要低 视频里都有提到,直到麻球开始蓬松。掉芝麻的问题,只要你按照视频里的步骤 抹水 再搓实 就不会了。

开始的油温 不能高 一高外皮就硬了,要用低油温慢慢渗透热量 让麻球从里面先蓬松出来 最后提高温度外层定型。
还有用开水和面太烫手了
主要我们手心皮嫩,我妈就照样揉烫面,她早年做重活手掌厚。买个和面的袋子,把面团放里面揉就好了,好不沾手o(* ̄▽ ̄*)ブ
