Braai & BBQ Stories Episode 1 - Braai Basics on how to build a Fire & Braai (BBQ)chops to perfection

  • With braai stories the aim is to reach out to the world, showcasing this great cooking tradition some South Africans enjoy several times a week with South Africa 's beautiful climate. I also want to reach out to youngsters and people who may lack confidence to braai and perhaps help in my humble way, to make the world a better place. If you braai and can braai properly, the world becomes a joy like no other. Join me around the fire on a journey as we braai together and share some stories. Braai and stories go hand in hand. South Africa's version of the BBQ is called BRAAI and what makes it different is that we mostly braai, using wood, as opposed to gas. Braais are known for good times with lots of jolly laugher, banter and joy. Today I show people how a fire is built and how we braai the humble chop to perfection... every time. I also share a couple of stories on my past and where I come from and why I believe myself to be skilled around the braai.

    I love how us as South African's are so passionate about braai. As the Youngest my brother and father used to braai and never trusted me to braai. So I am only learning now as an adult through this video to braai.

    its not Afrikaners only ...but South African Men regardless of your heritage . Braaing is an instution, a science, an art and a right of passage from been a boy to becoming a man .I was Born in Johannesburg from Italian Parents ...and there is no other way to Identify South Africans overseas ...we will always be at the braai and been the Braai Master .......Thanks for your Video and thanks for making me proud to be a South African .. moenie vergeet di pap en sous asseblief chomma 💯💪🤙

      You are so very right. I recently made one in an even more back to basics style on my Karoo and Kalahari Cuisine series but then that video was a flop with too much wind noise. Take a look at that series over the next month as I upload. I am sure you will like it.

Nou net Weskus toe getrek (Paternoster se kant) van Centurion af, en as jy nie hier in die Weskus braai nie, lewe jy nie. Man of vrou. What I appreciate most about your video is showing us how to braai using wood, not briquettes/charcoal. Wood definitely gives the meat a special taste, which is what braaing is about.       That is the basic way we spice most lamb tjoppies when we braai! Be careful with the white pepper it can be potent.

    Great to watch Kortes, I am just starting to learn to Braai, I got a grill with an ember maker as well but that takes time? How many logs you use for an average bbq for 4 people? Dankjewel!

      Black pepper will also be a huge hit as well. I grew up with white pepper and only became accustomed to black pepper much later in life. For that reason, I often use white pepper, although black pepper remains most used.

    A braai is when you can use the same tongs for the coals and the meat. I saw a guy moving heat beads once and then straight to the meat 😄 crunch crunch crunch 😑

    Great video, thanks! As a novice wood braai’er… I really struggle to maintain heat from the wood, almost as if I wait too long before getting the meat on. Takes a lot of practice to get it right!

    Fantastic! My lady has never enjoyed a Braii before (Not really a thing in the UK!) and I came looking for some advice when i stumbled on your videos. Great presentation and I am totally borrowing/stealing your technique for starting your wood coals. I have made my own boerewors in the past - any ideas for a British man looking to impress his friends??

      Hello, thanks for the support. I will do a ‘potjie’ real soon. A potjie is like a stew we make on the fire in a cast iron pot used by africans. I also pln to share most of my content in both english and afrikaans. This way foodies like you can do a variety of awesome SA foods

    sorry if I missed it in the video but is there any type of wood specific for Braii? In BBQ where I am from I prefer pecan wood for smoking just wondering what the traditional method is?

      Here in South Africa we have various woods which is good for braai like the camel thorn used in video. Certain woods may provide coals that causes a bad taste to the meat when braaied on the coals, for example blue gum. Good characteristics for braai wood, is wood that provides long lasting coals which also creates a nice flavour to the meat being braaied. Wood like the camel thorn used in video, provide good coals for a braai, but is not good for smoking. For smoking pecan, beechwood, etc. remain a better choice.

    My last braai was on Dec 24, 2015. Then I had to hear people whine in 2020. I watched that other braai show, yet they braaied only once. What stupidity. I loved watching this. I rate men by how they build a fire and braai.

    Can anyone type out the name of the wood? This video brings back great memories of SA. We would attend many Braiis and the guests went out of their way to speak English at first, but as the Klipdrift and Coke flowed, they all went back to Afrikaans😊😊. Some of the most fun we have ever had with the best food!

      This wood is Kameeldoring Wood and directly translated means camelthorn wood. Super awesome with a great smell. Oh yes, and when the Klipdrift and Coke begins to flow one forgets how to speak English and goes into default mode. (totally unexplainable). LOL.

    Have you built your grill yourself or can you buy those ? Looks very solid and handy

      It is indeed very handy. I had it custom made and decided to invest for life by having this made from marine grade 316 stainless steel. Not perfect yet, but indeed very robust with minimal wear despite the heat.

    Scrapes the coals with tongs, then turns the meat with the same tongs. Adds a bit of crunch to the meat, I suppose. LOL
