My parents had a great italian restaurant and I was working there and making carbonara's every single day (age 13-19 or so), and I completely forgot about that, whilst I loved it! You woke up great memories! It is a small gift, I was trying it out (the google gift stuff), and in any case: those memories are priceless so it is more or less symbolic

You took your obsession for Carbonara to near taste exhaustion, but then devised how to extend that Carbonara passion by making your perfected recipe for others! Brilliant!
Italian here, i would say that carbonara doesn't have an official recipe, today is with pecorino and guanciale, but many use pancetta. The first writtten recipe we have is with pancetta and milk cream, but is belived that the first carbonara invention was with bacon, because that was what american soldier had in their food ration and italians cooked for them using what they had + eggs and pepper. Btw your carbonara look good, you can officially request your Pastaporto.
Off topic, but your videos have inspired me to pursue my hobbies and interests more. Before then, i'd be uncomfortable doing things just bc they make me happy. But what's wrong with happiness? Why *not* bring more joy into the world? Thanks for sharing your unapologetic joy with us all
Over the last 40 some years I've lived in several countries around the world and visited many, many others for work and play. I spent a year and a half living in Italy and fell in love with carbonara and risotto. The only problem was that on leaving Italy, I never found anything even close. What you prepared using the proper ingredients looks fantastic, I can't cook but am going to beg my wife to give this a try!

Great video, I’m Italian and also living in Brighton. I’m glad you visited the city. A simple trick to avoid to cook the egg sauce, you didn’t!, is to transfer the pasta and the guanciale in another bowl, instead of leave them in the pan, and pour the sauce in it.
What a fantastic video. I would have given this 100 thumbs up if it were possible!!! I lived in Italy in my 20s for about 8 months. It is very nice there. AND the food is brilliant! I would have loved to try the Artichoke dish. It looked amazing. I think I see a FOOD TRUCK in your future, Alex! How's the gardening going? We have been so busy here on the farm getting all the food crops in the ground. Working 10 hrs a day, even using lights at night to finish off sections. It's hard work as a "Farm to Table" Organic grower. It was also fun to see Carl in one of your videos. I've not seen his videos in my feeds in ages..

(Also if you're accepting tips from home, next time pull out the pasta and pour everything in the bowl with the egg and pecorino, immediately, no middle steps, just a little bit of pasta water (in the bowl) if it seems too thick. Super easy way to make what you're already doing look even fancier... After cooking the guanciale (but before adding the pasta) remove a couple pieces and set them aside. After plating each portion of pasta, add those pieces to the top of each portion, then add more of that finely grated pecorino cheese to finish it off. Awesome video, now I need some pasta.

Use 2 egg yolks instead of 1 whole egg, fry ur pepper in with the bacon at the end of its cooking, don't forget the pasta water is a huge addition to the sauce
Tip - add some of the pasta water to the egg and cheese mixture will reduce the chances of the eggs scrambling and if you want it more creamy add more pasta water to the pan while combining it all together

I have a big love of carbonara too and need to really get my hand on some guanciale. Sauce with yolks is fantastic, you can save the whites for a meringue or a healthy omelette.
I absolutely love carbonara ❤ I recently started mixing cooked broccoli in together with the meat, cheese and eggs, and it just breaks down into a delicious green pasta. You should try it if you’re interested. It’s also the reason i started growing broccoli 🥦😊

Genius and most enjoyable, I have just fitted a big screen radio with car play and reverse cam even shows doors open and parking sensors , and works with front recording dash cam etc in 2018 caddy, very reasonable and looks factory fitted also it is superb especially the reverse cam i can send you the links if you like, 15min job plug and play then a good hour to route camera cable. you could even get a video out of it 😃ed

Another tip is that you can put a little of the pastawater in the egg/cheese-mixture to temper the egg before you put it in with the guancale/pasta.
