I think the reason Farquaad chose Fiona was because with Snow White, he’d have to deal with his father, Grumpy, and his six other uncles. With Cinderella he didn’t exactly want a servant.

I heard a theory on RUclips saying that Fiona's mom put out Fiona's advertisement in the mirror for some one to save Fiona and thinking about it know that does make more sense considering how all the other Shrek villians plots revolve around princess Fiona

Personally if I were Lord Farquaad I would’ve chosen Cinderella or Snow White while she’s in the coffin asleep that is. But Cinderella would’ve definitely been my number one choice since I love sushi and hot tubs.
