Love the idea of dehydrating pickled jalapeños. And I know all too well 'pepper-spraying' yourself from the 1st time I powdered our chilli. That was around 20 years ago... and I still feel that lesson!!! 😳🤯🤣

I’m growing cabbage !!!! I am so gonna save this video !! Little tip for u with ur cabbage … u can use the leaves n literally wrap the leaves around your feet, your feet will cook the cabbage lol (throw out after 😜) but it will take out the toxins from your body 😉🌱💫👍🏽 Daz ur awesome … thanks my friend !
If you get the chopped, frozen broccoli it dehydrates much more evenly because the stem pieces are small. It's more suited for soups and casseroles when done this way rather than fresh eating. It's still very versatile. Good in mac n' cheese too.
Okay I discovered your channel yesterday, and that is twice in 24 hours you have raved about dehydrated tomatoes and jalapenos. So I guess I need to give those a try! Because there is not much better in this world than tomatoes and peppers.

Hah, hah, yes, I'm a bit of a fan. 🤦♂️😊 Back when I was a young chef, we did not have dehydrators, so we would dry things out over night in a big commercial oven and I just loved it and I experimented so much with dehydrated tomatoes in particular, so I think it is something that has never left me. I made fermented sriracha and once the sauce went through the sieve before bottling I powdered the skins and seeds. it makes a great spicy seasoning. No waste!

Wonderful video! I have dehydrated food off and on, for years. I dehydrated herbs… saving money by using my own dehydrated herbs instead of store bought. Dehydrated celery is so awesome! I just love the knock my socks off flavor punch of dehydrated celery! I dehydrated apples… love them. Dehydrated apricots… they are good, but can’t compare to commercial because of the chemicals they use to prevent darkening. I dehydrated grapes… a lot of trouble. I made my own “cayenne” powder with some of my dehydrated peppers… turned out very flavorful and not too hot (I used a mix of the peppers I had grown). I dehydrated tomatoes and enjoy eating them as a crunchy/leathery snack. But all along, I preferred canning. I eat salsa on just about everything, and I put canned tomatoes in just about everything! This year, after canning so many jars, I had no space on my shelf. So I focused on dehydrating. This year I dehydrated lots more peppers, carrots, corn, green peas and mixed veg. I also did the parsley and cilantro. I used to only use the dehydrated items as separate ingredients in recipes. This year, for the very first time, I assembled meals in a jar! I love them and am looking for more meal in a jar ideas! I’ve been watching other content creators show how they use pepper powder, so I’m going to grow more pepper varieties and dehydrate them. I bought frozen broccoli, but haven’t dehydrated it yet. I’ve never tried dehydrating cabbage!!! All in all, I’m really sold on the dehydrating, powdering and also assembling meals in a jar. You’ve inspired me to dehydrate pickled jalapeños and I am eager to powder some celery! I’d love to see some of your meal in a jar recipes! Thanks again! Have a great day!

Great video, Daz! Sure do appreciate all the ideas you gave on using your dehydrated items. Although it got better finding jars and lids here in the US, we went just last week to get jars at our usual place, and they were out of pint and quart jars and didn't have any extra lids. So I'm thinking your onto something by dehydrating so much!

I love jalapeño powder. I put a damp kitchen towel over the top of the blender while grinding and then just let it set a while to let the dust settle. You have so many good ideas to try. I like to zest and juice lemons then freeze in ice cube trays so I always have some on hand for recipes. I never thought about dehydrating lemons. I need to try that one for sure!

I hate that you guys can't get jars right now but I love the idea of having the sealed bags in an emergency bag. Great idea! I totally agree bout the grinding of jalapenos. Thats’s good info for the broccoli. I like to chop up the stalk to eat as a side with dinner anyway. Maybe I can just cut the florets for dehydrating and save the stalk for the fresh eating… I’m definitely getting a dehydrator this year!

Love this. We dehydrate chilli, dill, basil and a lot of herbs. Christmas time we dehydrate orange slices and dip them in chocolate. We make leek powder as a stock.....put it in mashed potatoes - brilliant.

Thank you very much for your really good video today. I love tomatoes and your idea about putting them on the burgers or sandwich in the sauce or on the sauce I think I would like a lot. Also glad you mentioned the broccoli stems. My family absolutely loves broccoli but in order to have enough we would have to have a dedicated freezer for broccoli and maybe more than one. May reconsider this for this year I was actually going to try it, thanks for all you do enjoy watching your videos and your lives

I enjoyed this video a lot. It sounds like your natural voice. You may want to try freezing your grapes. The kids will likely love them that way. I do. I eat them with yogurt which quickly freezes like icecream but healthier. I’m hoping for a bumper pumpkin yield this year so will remember to dehydrate some into powder.

Great video Daz! I was wondering where you were able to buy a processer that grinds food into a powder? I dehydrate lots of foods but Ive never made powdered goods before and was wanting to try :)
G'day. I use a coffee and spice grinder that works similar to this one on the Amazon store... amzn.to/3Rrxt4b (That is an affiliate link to be fully transparent). These are the cheapest option, but you cannot do big batches in one go. I also use my high speed blender from time to time, if I have big quantities, but be aware that the course ingredients can cause the clear plastic on the container to go cloudy and possibly discolor. Not much you can do about that, other than having a container on the high speed blender made of glass. I used to own a dehydrator for fruits and such long ago, then lost it in a move somewhere. I just bought another one but I've yet to use it for fruits LOL. They make excellent cookie dryers if you're waiting for different levels of icing to set LOL. Cheers Daz! You're almost at 2k!

I’m just new at dehydrating and it’s my first time in a long time having a vege garden, I’ve done tomatoes and they are so good, I’ve done zucchini’s as well, I’v had heap come from my garden, I’ve left some in flakes and powdered some and excited to use it. Frozen vege hydrated I’m defiantly going to do, this well free up some much need space in the freezer. Im new to your channel this is just what I needed so thanks.

Good video. Yeah I made mistake of powdering my home grown dehydrated jalapenos without mask, husband was laughing at me, was choking and sinuses cleared real quick!! Try tomato powder, it's awesome. Think tomato paste on steroids. Dehydrated watermelon is like candy, but I wont do it unless it's going because it doesn't yield a lot due to water content.

This was an excellent video and so informative! Daz thanks for sharing about all the things you dehydrate and WHY you would or would not do again. I agree tomatoes! And celery! Yum. I did celery in small slices and they were amazing to add to recipes. I like the points you made regarding store bought jalapeños and dehydrating them and saving fresh ones for other recipes. Practical. Love the powder idea also. I love dehydrating. And the vacuum sealing idea is cool. Did I see you put a bit of paper in your mason jars also?
G'day Lisa. This was rather rushed, due to limited time, so I did miss a few points. I think you might be refereeing to the oxygen absorbers in the jar, on top of the food. Because I buy them in bulk, it is quite affordable to put on in every jar that I have for long term storage. I don't do it to the jars I open on a regular basis, but with those ones, I take them over and vac seal them again as soon as I have taken out what I need. Thanks very much Lisa. G'day Sandra. Pumpkin powder is great in scones, bread loaves and rolls, pasta, adding it to soups and stews... One good thing about it, it that you have to dehydrate a lot of butternuts to grind into a powder, so that will burn through them. With storing the butternuts, I leave them in the sun for about 2 weeks after picking to cure a bit and then store then in a dry and dark place and they last for months. You started with tomatoes. When you followed it up with Jalapeno, I immediately thought of Pizza 🤣. Hmmm... Jalapeno pepper spray. How do you dehydrate them Daz? With a small backyard, I don't think I'd get to a point where I have so much of one thing. I have been considering freeze dryer.
G'day mate. Hah, hah, yes. Pizza doe sure! Yum! I have a 9 tray dehydrator and they do well in that and dried, but the smell can be strong, so I open all the windows. I also buy vegies when really cheap, so I can dehydrate and store them. A freeze dryer is my number 1 wish, but it's something like $7000.00 dollars to import one. Not going to happen. Nice channel Daz! I used to live in Aus pre first lockdown but now in nz. Sad to hear what you are saying about ball jars but to be expected. I assume it will be as bad in nz. Any thought on what good and not good prices for them would be now in your opinion so i can get the right prices if i can.
G'day Ashleigh. It's nice to meet you. That is such a hard question, as what one person would pay, another may not, if you know what I mean... As an example here... I was paying around 30 dollars for a box of 12 pint jars (Ball brand) including delivery with Amazon Australia, or in stores like Big W. Now Amazon are charging about 85 dollars for the same ones shipped from the USA and some local sellers had old stock and were charging around 100 dollars. For me, it's way too much as I can recycle old jam and pasta sauce jars for water bathing and I can dehydrate and store in vac sealed bags. If I had no jars at all, I might consider the high cost for essential pressure canning items. Sorry I don't have a better answer for you Ashleigh, but things are just so strange and somewhat difficult with what has been going on the last couple of years. G'day Katie. Surprisingly, no. Well, not for me. I drain them first and give them a rinse on a colander before dehydrating. I tend to use them on burgers, steak sandwiches and pizza for instance, so I generally notice that nice little bit of chew they still have and the kick of heat. I sometimes notice the jalpeno taste itself, but definitely not the pickling liquid, which is quite pleasing. Thanks very much and take care Katie. Daz.

Love all the ideas Daz I watched to see if you had the pumpkin powder you mentioned you loved but now I’m keen on trying jarred jalapeño I think would be very tasty after being in the vinegar etc I collect the silica satchel from electronics packaging but have not seen them on sale in bulk do you buy online or from a store? I also use in a tub of stored seeds
G'day. My next video is me making the butternut powder, as I had so many comments on it. 👍😊 No, not the silica from electronics. Definitely do not use them. If you look on Ebay for instance, you will see 'oxygen absorbers" for food and they are very different in what is inside them. They come with different ratings which is like a 'strength' rating. That means that the bigger the container, the more of them or the higher the packet rating has to be. You also have to be careful not to use them with a lot of things, as any foods with moisture or oils still in them, can actually encourage the growth of botulism, when using these. They also turn salt and sugar in to hard bricks if stored with them. Once you open a bag of them, they will immediately start drawing on the air and will go bad if you do not seal them in an air tight container immediately. I might do a video on all this, as it can be a little intimidating and I and no expert though and still have a bit to learn myself. You definitely need to look at the right ones and which foods they can be stored with. All the best and take care, Daz.

G'day Vro. I cannot vacuum seal jars other than the Ball branded jars at the moment wit the attachments from the Food Saver machine. I do however, wash and sanitize those jars, as well as others and will drop an oxygen absorber in with the dry goods and that will usually work. From what I understand though, you need to make sure the dried food has less than 10% moisture in it if using oxygen absorbers. Best to research that bit to know for absolute certainty. G'day Stephanie. I do apologise for the slow reply. I have a blender and a food processor that I have been using, but the hard, dehydrated items are actually wearing a groove into the plastic of the food processor. Due to this, I am now looking at alternatives and I am hearing good things about coffee grinders, but i still need to research this more. I can only really afford to buy something once and for the long run, so i really want to make sure I get the right thing. Oh and with the powders, people tend to put them through a sieve. I do sometimes, but not that often as I generally do not mind the little bit of texture. I can always sieve the powder am I using for a specific recipe if I need to. G'day! Great question. Carrots, cauli, broccoli and cabbage I will blanch as I believe it helps with the colour. In general, if I have a raw veggie from the garden, I will blanch it first. Onions, I don't though. Neither do I blanch capsicum (Bell pepper), chili or jalapenos. Frozen veggies I don't as they are blanched before frozen. Love the idea of dehydrating pickled jalapeños. And I know all too well 'pepper-spraying' yourself from the 1st time I powdered our chilli. That was around 20 years ago... and I still feel that lesson!!! 😳🤯🤣

If you get the chopped, frozen broccoli it dehydrates much more evenly because the stem pieces are small. It's more suited for soups and casseroles when done this way rather than fresh eating. It's still very versatile. Good in mac n' cheese too.

Back when I was a young chef, we did not have dehydrators, so we would dry things out over night in a big commercial oven and I just loved it and I experimented so much with dehydrated tomatoes in particular, so I think it is something that has never left me.

I made fermented sriracha and once the sauce went through the sieve before bottling I powdered the skins and seeds. it makes a great spicy seasoning. No waste!

Ah, that's a great idea. I have mixes for soups and some basic ones for stews, but we make savoury mince and I never thought to have some dehydrated ingredients put aside.

Wonderful video! I have dehydrated food off and on, for years. I dehydrated herbs… saving money by using my own dehydrated herbs instead of store bought. Dehydrated celery is so awesome! I just love the knock my socks off flavor punch of dehydrated celery! I dehydrated apples… love them. Dehydrated apricots… they are good, but can’t compare to commercial because of the chemicals they use to prevent darkening. I dehydrated grapes… a lot of trouble. I made my own “cayenne” powder with some of my dehydrated peppers… turned out very flavorful and not too hot (I used a mix of the peppers I had grown). I dehydrated tomatoes and enjoy eating them as a crunchy/leathery snack. But all along, I preferred canning.
I eat salsa on just about everything, and I put canned tomatoes in just about everything! This year, after canning so many jars, I had no space on my shelf. So I focused on dehydrating.
This year I dehydrated lots more peppers, carrots, corn, green peas and mixed veg. I also did the parsley and cilantro. I used to only use the dehydrated items as separate ingredients in recipes. This year, for the very first time, I assembled meals in a jar! I love them and am looking for more meal in a jar ideas! I’ve been watching other content creators show how they use pepper powder, so I’m going to grow more pepper varieties and dehydrate them. I bought frozen broccoli, but haven’t dehydrated it yet. I’ve never tried dehydrating cabbage!!!
All in all, I’m really sold on the dehydrating, powdering and also assembling meals in a jar. You’ve inspired me to dehydrate pickled jalapeños and I am eager to powder some celery! I’d love to see some of your meal in a jar recipes! Thanks again! Have a great day!

Although it got better finding jars and lids here in the US, we went just last week to get jars at our usual place, and they were out of pint and quart jars and didn't have any extra lids. I love jalapeño powder. I put a damp kitchen towel over the top of the blender while grinding and then just let it set a while to let the dust settle. You have so many good ideas to try. I like to zest and juice lemons then freeze in ice cube trays so I always have some on hand for recipes. I never thought about dehydrating lemons. I need to try that one for sure!

Yes! I used to use ice cube trays too for lemons and a few other tings actually, but I am now finding just how much space I can save with dehydrating and there is just something about lemon powder for instance that I just makes me smile.

It has been so frustrating trying to get jars. Postage is the biggest problem as it would cost so much to have a box or 2 shipped.
Even Amazon are charging about 120-140 dollars for a dozen jars shipped.

Thats’s good info for the broccoli. I like to chop up the stalk to eat as a side with dinner anyway. Maybe I can just cut the florets for dehydrating and save the stalk for the fresh eating… I’m definitely getting a dehydrator this year!

Love this. We dehydrate chilli, dill, basil and a lot of herbs. Christmas time we dehydrate orange slices and dip them in chocolate. We make leek powder as a stock.....put it in mashed potatoes - brilliant.

I enjoyed this video a lot. It sounds like your natural voice. You may want to try freezing your grapes. The kids will likely love them that way. I do. I eat them with yogurt which quickly freezes like icecream but healthier. I’m hoping for a bumper pumpkin yield this year so will remember to dehydrate some into powder.

I use a coffee and spice grinder that works similar to this one on the Amazon store...

These are the cheapest option, but you cannot do big batches in one go.
I also use my high speed blender from time to time, if I have big quantities, but be aware that the course ingredients can cause the clear plastic on the container to go cloudy and possibly discolor.
Not much you can do about that, other than having a container on the high speed blender made of glass.

Good video. Yeah I made mistake of powdering my home grown dehydrated jalapenos without mask, husband was laughing at me, was choking and sinuses cleared real quick!! Try tomato powder, it's awesome. Think tomato paste on steroids. Dehydrated watermelon is like candy, but I wont do it unless it's going because it doesn't yield a lot due to water content.

This was an excellent video and so informative! Daz thanks for sharing about all the things you dehydrate and WHY you would or would not do again. I agree tomatoes! And celery! Yum. I did celery in small slices and they were amazing to add to recipes. I like the points you made regarding store bought jalapeños and dehydrating them and saving fresh ones for other recipes. Practical. Love the powder idea also. I love dehydrating. And the vacuum sealing idea is cool. Did I see you put a bit of paper in your mason jars also?

This was rather rushed, due to limited time, so I did miss a few points.
I think you might be refereeing to the oxygen absorbers in the jar, on top of the food.
Because I buy them in bulk, it is quite affordable to put on in every jar that I have for long term storage.
I don't do it to the jars I open on a regular basis, but with those ones, I take them over and vac seal them again as soon as I have taken out what I need.

G’day Daz, can you share how/what you use/do with pumpkin powder, please? I have over 30 butternut pumpkins growing and am looking for ideas on how to use, share and store them. Happy gardening/food processing/etc. Cheers, Sandra

Pumpkin powder is great in scones, bread loaves and rolls, pasta, adding it to soups and stews...
One good thing about it, it that you have to dehydrate a lot of butternuts to grind into a powder, so that will burn through them.
With storing the butternuts, I leave them in the sun for about 2 weeks after picking to cure a bit and then store then in a dry and dark place and they last for months.

Hmmm... Jalapeno pepper spray. How do you dehydrate them Daz? With a small backyard, I don't think I'd get to a point where I have so much of one thing.

I have a 9 tray dehydrator and they do well in that and dried, but the smell can be strong, so I open all the windows.
I also buy vegies when really cheap, so I can dehydrate and store them.
A freeze dryer is my number 1 wish, but it's something like $7000.00 dollars to import one. Not going to happen.

Nice channel Daz! I used to live in Aus pre first lockdown but now in nz. Sad to hear what you are saying about ball jars but to be expected. I assume it will be as bad in nz. Any thought on what good and not good prices for them would be now in your opinion so i can get the right prices if i can.

That is such a hard question, as what one person would pay, another may not, if you know what I mean...
As an example here... I was paying around 30 dollars for a box of 12 pint jars (Ball brand) including delivery with Amazon Australia, or in stores like Big W.
Now Amazon are charging about 85 dollars for the same ones shipped from the USA and some local sellers had old stock and were charging around 100 dollars.
For me, it's way too much as I can recycle old jam and pasta sauce jars for water bathing and I can dehydrate and store in vac sealed bags.
If I had no jars at all, I might consider the high cost for essential pressure canning items.
Sorry I don't have a better answer for you Ashleigh, but things are just so strange and somewhat difficult with what has been going on the last couple of years.

Dehydrated pickled jalapeños. Sounds delicious. Is the pickle flavor still in the dehydrated jalapeños?

Surprisingly, no. Well, not for me.
I drain them first and give them a rinse on a colander before dehydrating.
I tend to use them on burgers, steak sandwiches and pizza for instance, so I generally notice that nice little bit of chew they still have and the kick of heat.
I sometimes notice the jalpeno taste itself, but definitely not the pickling liquid, which is quite pleasing.

I watched to see if you had the pumpkin powder you mentioned you loved but now I’m keen on trying jarred jalapeño I think would be very tasty after being in the vinegar etc
I collect the silica satchel from electronics packaging but have not seen them on sale in bulk do you buy online or from a store?

No, not the silica from electronics. Definitely do not use them.
If you look on Ebay for instance, you will see 'oxygen absorbers" for food and they are very different in what is inside them.
They come with different ratings which is like a 'strength' rating.
That means that the bigger the container, the more of them or the higher the packet rating has to be.
You also have to be careful not to use them with a lot of things, as any foods with moisture or oils still in them, can actually encourage the growth of botulism, when using these.
They also turn salt and sugar in to hard bricks if stored with them.
Once you open a bag of them, they will immediately start drawing on the air and will go bad if you do not seal them in an air tight container immediately.
I might do a video on all this, as it can be a little intimidating and I and no expert though and still have a bit to learn myself.
You definitely need to look at the right ones and which foods they can be stored with.

I'm new to the channel, great tips! Do you use your glass jars from say your jalapenos to vacuum seal your dry goods?

I cannot vacuum seal jars other than the Ball branded jars at the moment wit the attachments from the Food Saver machine.
I do however, wash and sanitize those jars, as well as others and will drop an oxygen absorber in with the dry goods and that will usually work.
From what I understand though, you need to make sure the dried food has less than 10% moisture in it if using oxygen absorbers.
Best to research that bit to know for absolute certainty.

I do apologise for the slow reply.
I have a blender and a food processor that I have been using, but the hard, dehydrated items are actually wearing a groove into the plastic of the food processor.
Due to this, I am now looking at alternatives and I am hearing good things about coffee grinders, but i still need to research this more.
I can only really afford to buy something once and for the long run, so i really want to make sure I get the right thing.
Oh and with the powders, people tend to put them through a sieve.
I do sometimes, but not that often as I generally do not mind the little bit of texture.
I can always sieve the powder am I using for a specific recipe if I need to.

hi I bought a large jar of roasted capcicums and would prefer to dehydrate them is this possible they are in a brine Also do you have a video on how to dehydrate foods etc ??

You certainly could dehydrate capsicums in brine.

Are you blanching your vegetables first?

Great question.
Carrots, cauli, broccoli and cabbage I will blanch as I believe it helps with the colour.
In general, if I have a raw veggie from the garden, I will blanch it first.
Onions, I don't though. Neither do I blanch capsicum (Bell pepper), chili or jalapenos.
Frozen veggies I don't as they are blanched before frozen.
