I found that a long thin flexible filet knife was easier for me to control. With a filet knife it is easy to split a chicken breast or thigh through the middle. david

Man, I made your chicken rollatini but no matter how much I tried slicing the breast thin it just wouldn't come out thin enough. Still made it and came out great but just didn't have that Cookin With The Blues touch know what I mean? I see you slicing'em on a slight diagonal which looks a lot easier, so I'll try that next time. We Love you down in the Valley of South Texas.
I enjoyed learning how to make chicken cutlets - I can never get it right, but now I'm in! What is the best type of knife to use for easy slicing. I have a butcher's knife, but not sure if it has the ease that I'm seeing shown - maybe too long. My mallet is effective when the TV is too loud, that's my goal....thanks "Chaplin's Classic".

So much wrong with this video... cutting raw chicken on a cooked meats board... cutting raw chicken with no gloves and covering his hand in e coli then preceding to touch plate and such without even washing his hands... I'll be avoiding this place.

Jason is right. This guys is just typical restaurant cook who is sharing his years of experience in the kitchen. He doesn't have a whole crew, director and editors to catch everything for a perfect filming on national television. Hes just improvising to share his knowledge with us. He probably knowingly cut corners for the video because he didnt want to take the time to make this into a master class... lol. Because if he regularly carelessly cross contaminated his kitchen people would have gotten sick and he would not be cooking anymore.... come on people!
