I'm doing the same thing I have seven cultivars on my pear tree and I have three on my apple trees.
Great video and perfectly timed too, since I need to prune my pears and apple trees. I will try and experiment with grafting the pruned branches on to different trees this year, hopefully some take.

This is the video of the man who grafts trees with 40 different fruits. I think you could in theory graft a pepper plant that has a lot of different peppers and over winter for years to come.
