    The way he is mixing the rice let's hin look as If he does it for the first time. This way you're crushing the rice grains and you get mushi sushi

    Would it make a difference if I leave the kombu on the mix for a longer period of time?

      The tutorial discards the kelp once the mixture turns to room temperature. As for the specific time for the kelp to extract its maximum flavor, it wants to be left at least for a couple of hours, preferably overnight.

    What’s the difference between ohitsu and hangiri ? And which one is more indicated ?

      Nanoci62 those are pretty similar and sometimes compatible. But to my understanding, ohitsu is more as a rice tub to scoop the rice from when serving, and hangiri mainly used just to mix rice with vinegar. Those are also called differently region by region.

    how many the ratio of rice cooked in the sushi rice vinegar mixture?

      Antonio Fittipaldi Refer to another video about sushi rice here ruclips.net/video/OuebNgheajo/видео.html Usually 350ml of sushi vinegar against 10 cup of rice. There are lots of different variations of recipe online, so adjust to your preference.

    hi , if i make 2800ml rice vinegar do i have to add 200ml mirin or 20ml?

      It’ll be 200. Multiple all the ingredients by the same ratio.

      @@vupham2931 Kombu is just for the flavor. Basically multiply by the same ratio, but doesn’t have to be precise.

      ok i checked some other sushi vinegar recipes and urs is very salty and little more sweet. u think i can go go less salt too? and less sweet

      Alessandra Ricotta So sorry it took a while to find out the error. The actual recipe really varies restaurant by restaurant, so it shouldn’t be totally wrong though, I just re-uploaded here with the more common ratio.

      @@howtosushi8176 No, you don't have to be sorry, it's fine. It's just homemade sushi, I have a lot to try and master, is ok to do something wrong sometimes, it helps to learn!

      It's all based on preference. I own several books written by Sushi certified Sushi masters and none of them uses that much sugar in their vinegar for example.
