Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I'll do my best to post a video on my channel periodically. I upload vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

This was like watching an episode of MTV Cribs, but BBQ edition 😯
😂😂
I loved seeing Junior's setup. Thanks to Harry and Junior for the tour.
That's what BBQ is all about. Love that equipment.
Love Junior's choice of pits!
Love BBQ but as a inner city Londoner I’m clueless and completely blown away by the knowledge and skill of these geezers ✊ respect
Start slowly with a Weber Kettle and work your way to more complex preparations. Check out your local London BBQ Associations for help - www.slapyodaddybbq.com/2012/07/british-bbq-championship-cartmel-england/
Love the video, Oyler is a beast! J&R is a 3rd generation Family business since 1974 and its thanks to great Pitmasters like this. Appreciate the kind words. Keep smokin!
Thanks Ryan. If you can get me a contact, I'd like to visit and film a video at their factory
Hello Harry!
I cooked on Oyler pits for over 35 years. Owned a BBQ joint here in Carlsbad NM. Had 2 Oylers and a J&R Smokemaster.
The Oyler is the best pit God ever let man make in my opinion. Looked forward every morning to firing them up. Great video. Thanks.
Thanks for stopping by Danny. Some Oylers have been running since 1968 and still going strong. I've even seen one at the Raffles Hotel kitchen in Singapore!
You sell your restaraunt or what happened? Sounds like a large operation
He’s living the dream and deserves all the success.
Junior is DA MAN!
He has a nice set up. I'm sure he had to work hard to get what hes got with out giving up.
this was an awesome series and junior is an amazing pitmaster. great great info in the series as well. awesome job harry
Happy to share a glimpse into a real Texas pitmaster's daily routine
Unreal.
Junior is DA MAN! Always enjoy hanging out with my BBQ brother!
I never heard of junior before and you just inspired me to add junior's place to my family road trip in a couple of weeks. Let's see what this pit can do!
Say hello when you see him. Check out Part 1 and 2 when you have time
@@SlapYoDaddyBBQ will do
Junior, the Mighty Chihuahua 👍🏼🇺🇸👍🏼🇺🇸
He's DA MAN!
@@SlapYoDaddyBBQ you two both seem like awesome folks 👍🏼🇺🇸
Junior is definitely on a hole different level of BBQ. Kind of like Yoda but for BBQ.
Junior is DA MAN!
@@SlapYoDaddyBBQ I guess I need to take a trip down to his restaurant this year after this covid 19 crap passes. We are only about an hour and a half away. Would like to know if you make it back down here again and plan to visit him. Maybe i can time it to meet you both...really enjoy your channel and just subscribed to his as well....Take care
Expensive but awesome smokers.. Love how he has that all setup. Great video Harry.
Best smokers in each of their respective classes
Very helpful 👍

Wow this is amazing video! Thanks so much for showing and explaining how these bbq joints cook the food and cookers.
You're very welcome. Enjoy parts 1 and 2 also

Say Hi ro Junior when you visit a
Soo Sifu: This is a great video, sharing what it takes to cook in a BBQ business! Thank you for showing us the equipment used in Mr . Junior’s business, and letting us learn from him! I wish him, and you, much success in your ventures! Best wishes, and regards, to you, Sifu, and your friends!🧧🤙🌺 🥩🍗
Junior has selected some of the best pits in each category and it was helluva fun cooking on them!
Wow, what a trip seeing these amazing rigs. So fascinating.
Pretty cool.. thanks
Thank you!!!!!!!!!!!!!!
You're very welcome
What a great setup.
Another cool video Harry! Love watching how the pros do it! Always can learn something! Keep giving us more videos like this!
Thanks for stopping by
Wow , very nice equipment. Amazing how efficient that big cooker is.
If you have 50 briskets, this is the way to do it!
@@SlapYoDaddyBBQ amazing. He is doing about half what Franklin does with only one smoker and at a fraction of the wood no less. Wow. I have seen Myrons wonderful self watering cabinet smoker. I didn't realize it was so expensive. I'm wondering if maybe the unit Myron was showing was a different smoker. 😀
Hi Harry how are you and your family? Hope all is well wanted to stop by say hi have a great day. Hi Junior oh my goodness wow 👍🏼👍🏼👍🏼👍🏼👍🏼 awesome
Junior is a superman and shows what a blessing we have in a hard working wonderful American
I think that Junior could make BBQ better with a trash can than I could with his Oyler and Mixon smokers!!! Prove me wrong??? Hahaha
Ok. Let me try myself first. What trashcan size will work do you think
Hi Harry another great video thank you. BBQ history
You're very welcome Gary
Impressive set up!!!
Love his choice of gear!
My definition of success in the BBQ Catering/restaurant business is being able to afford and utilise the Oyler pit, ever since I first saw it in 2012 it’s been a dream. One day.
Wishing your dreams come through!
Great video great info.😋
Glad you found the video helpful. Please see part 1 and 2 when you have time.
This is intense 😤😤😤
And super fun to cook on the world's best pits in each of the pit categories
Excellent video and content🔥
Thanks for stopping by. Junior is an awesome human being and a good friend
Very nice content.
Thanks for stopping by!
12% moisture comment blow the guys mind
14% is my go to number. Get a moisture meter from my Amazon store link Thanks for watching
I’m going there next weekend!
Remember to come pick me up first from San Diego 🤣
Absolutely, I’m in Carlsbad NM not CA though. Lol
@@JonahBear19 No problem, I'll be waiting! 🤣✌
Say Hi to Junior for me!
When Junior was taking those briskets out of the pit, I felt like I could smell them. Must have been delightful 😋
Junior is da man!
Jesus Harry, get a Dead Cat for your mic outdoors.
Where can u buy that wood splitter
Best to ping Junior Urias (Up In Smoke) on social media to ask as I don't cook with wood.
Do one with beef jerky!
Will do. You got any good recipes I can try. I'm always learning
@@SlapYoDaddyBBQ smoke sauce 3 tbsp, one cup of teriyaki sauce of ur choice,
1/4 cup of brown sugar
1 teaspoon of garlic powder
1 teaspoon of onion powder
Put in blender with 5 habaneros and 1 mango fruit blend until liquefy
Put in container put ur choice of meat slices inside marinade overnight
Then time for the dehydrator for 4 to 5 hours depending on how u like it .
I would like to get that little log splitter. Any ideas on where that comes from?
Please ask Junior on his facebook page
Thanks Harry

8:44 where can I get that splitter?
Nm found it
What type of ash/coal separator was Junior using?
Looks like a fish fry spoon basket
@@luish777 TY
I have a small one for fish fries. Barely any oil clings to them it's nice
Wonder how many bbq plates he has to sell to pay for all those pits?
When you cook 50 briskets a day you need reliable equipment that can take that type of duty cycle
Had his bbq one time when he was still in Midland. Mediocre at best. Also gave me the worst case of heartburn I ever had. Maybe it was an off day on the food cause I’ve had better. LOTS better.
Sorry to hear. Junior has a new restaurant now which is a flagship place in Early, TX - facebook.com/junioruriasbbq/
I can build one for cheaper. 100k is a ripoff
Oh shut up
Maybe bc Im Asian and I have different taste for BBQ. I never liked American smoked BBQ. Grilled and seared is more preferred for me. Fall off bone crap and smoke rings, is yucky. I dont know how you guys like the burn taste. Smokey is burn shit. Clean smoke dosent matter. Its still smokey. Nasty
Not because your asian...just belligerent
