    I'm taking you on a flavorful journey to the heart of Berry region, where rustic flavors converge in an iconic dish: the Berry potato galette. This French culinary specialty is an absolute delight, both comforting and delicious. In this recipe, I'll be sharing all the tips to prepare this galette in a simple yet scrumptious way. Potatoes, the star ingredient of this traditional dish, intertwine with other elements to create a crispy exterior and a tender interior.
    The galette berrichonne with potatoes originates from France, specifically from the Berry region. Berry is located in central France, and its traditional cuisine features local ingredients such as potatoes, which are used in this delicious galette.
    French potato and cheese puff pastry, La Galette Berrichonne, is an excellent Berry specialty made from a crispy puff pastry made of mashed potatoes, butter and cottage cheese. 👌
    Ingredients:
    - 300 g of potatoes
    - 300 g of flour
    - 160 g of unsalted butter
    - 2 large tablespoons of cottage cheese
    - 2 egg yolks
    - water
    - salt
    - pepper
    Preperation:
    1. Start by preparing the mashed potatoes. Peel the potatoes and cook them in a saucepan in a large volume of salted water for about 30 minutes. When they are cooked (the knife should fit easily into the flesh), drain and mash them to obtain a mashed potato using a mash press (it must be very smooth).
    2. In a bowl, combine the mashed potatoes and flour.
    3. Salt and pepper and mix everything together.
    4. Then add the cottage cheese, one egg yolk and knead everything using a mixer with hooks until a homogeneous consistency is obtained.
    5. Form a ball of dough, then roll it out in the shape of a rectangle about 1 cm thick.
    6. Start making a puff pastry. Spread the butter on the dough, leaving two opposite sides without butter (about 3 to 4 cm from the edges).
    7. Fold the dough by folding the top third over the butter and then the bottom third on top and roll out the dough using a rolling pin.
    8. Turn the dough, fold it into thirds again and roll it out again.
    9. Repeat the same operation 2 more times, each time pinching the corners with your fingers.
    10. Cover the dough with stretch wrap and let it sit in a cool place (fridge) for about 40 minutes.
    11. Take the dough out of the cool place (refrigerator) and repeat step N ° 6 four times.
    12. Then cover the dough with stretch film and let it rest again in the fridge for about 40 minutes.
    13. Preheat the oven to 190°C (374°F).
    14. Take the dough out of the fridge, spread it out in the shape of a rectangle on the lightly floured work surface (7-8 mm thick) and cut it into 6-8 rectangles.
    15. Place them on a baking sheet, cover with the other egg yolk, make lines on top with a knife and bake them for 15 to 20 minutes until they are golden brown.

    ☑️ To bring the butter to room temperature, remember to take it out ahead of time.
    ☑️ Observe the resting times in the refrigerator.
    ☑️ If you want the patties to swell and delaminate better, including on the sides, trim the edges with a sharp knife after rolling out the puff pastry. If you leave the edges "round", the dough will swell less.
    ☑️ Be careful not to put the egg yolk around the edges, as it will prevent the dough from rising. Apply it only to the surface.
    ☑️ To keep the patties as fresh as possible, store them in a paper bag.
    ☑️ If the cakes are cold, preheat them in the oven for a few minutes before serving.
