I made bison burgers for 4th of July. The only thing i mixed in was finley minced shallots and seasoned with salt and pepper and i had grilled some onions. Double cheddar slices, red leaf lettuce, roma tomatoes, and i used onion poppyseed buns. The fam used mustard and mayo and a touch of ketchup and i swapped the ketchup for a spicy one called Arizona heat. Also depending on how messy the burger is, i do eat it upside down>.> The top bun is typically thicker and therefore more absorbant so less messy
Even if you can't boil water, anybody should be allowed to lambast Jack Scalfoni. That dude constantly eats raw chicken. Raw chicken aside, 90% of what he makes is vomit inducing.
The thing you’re misunderstanding about jack is that he’s incredibly arrogant. The reason why people mock him isn’t just because he’s bad at cooking (Kay’s cooking is even worse than jack and people largely find her endearing and are kind) it’s because he’s arrogant and refuses to listen. He’s been producing content on RUclips for well over a decade and has not improved at all. People don’t like how confidently incorrect he is and how he refuses to listen while acting like an expert. The man was just hospitalized for a stroke and came out partially paralyzed and resumed cooking incredibly high calorie, high salt, foods all over again. If somebody does something incredibly wrong and people try the “right way to correct those issues” and they just brush them off and say “fuck you this is how I like it you don’t know what you’re talking about” then they deserve the mockery

August the Duck jumped the shark a while ago. His reaction videos were funny at first, but when it got personal, I bailed. He's a young guy, and has all of the same pratfalls as most young people do. You keep doing you, man. I've been enjoying your vids for years and have always enjoyed your honest, straightforward approach.
Duck recently trashed Jack's video about the pork, apple and vegetable stew, which had its issues but was the only extant thing Jack's ever made on his channel that looked like it was cooked completely. Duck is not a home chef and has weird biases against some cooking aspects.

There used to be a "buffalo burger" place where I used to live. They raised their own bison. They were popular, I can only guess the owners either retired or died. Not far from there was a Gorilla Burger, and there was no Gorilla in them, but their burgers were pretty good. I think they closed, too, and I can only guess they retired or died. I love this channel, always be yourself! Oh, and turning the "top" to the bottom of a burger keeps the bun from falling apart, so the "top" that is thicker catches the juices without falling apart.
Drinking game rules too complicated for my brain cell, will just enjoy while drinking when wanting to. What you did here is the best way to answer the naysayers. Much respect, as always. Those of us who have been watching for a while know you're darned good cook, especially when it comes to some of those old gold standards like SOS, Salisbury steak, meatloaf, and Hoover Stew!
I love your videos and have for a while! I'm not a professional cook, I'm at 40+ years, Southern home cook, raised 2 kids and a slightly over-healthy husband on doing the same type of simple, use what you have meals, like you do. I've made several of your recipes, tweaked them to our tastes, no green peppers thank you, and they are GOOD! Thank you for everyday, average man cooking.

I actually followed a lady who made awesome bread, she had huge following but, many were so critical of her she decided to QUIT! :( I saved her channel and still go back for her great recipes. @@AcktongueBaby i agree, with 20/80 enough fat renders out, but with 4/96 you'll need to at least brush the burgers with oil first. However the three burgers/onion slices did pretty much use up all the oil that was put into that pan in the end

Looks nice man! I’ve been watching on and off for a long while even on a previous RUclips account I had. Completely get how toxic some of those types of channels in general can get and where the criticism can veer off into personal attacks and all. I think it’s a general issue with a lot of RUclips content however but yeah.
toasting making a difference depends a lot on what other stuff goes into the burger. if you just got some chilisauce or ketchup and an egg or something the toasting makes a huge difference, if you got some good flavored mayo and jalopenos and stuff like that it doesn't really matter.

In-and-out burger builds their burgers with lettuce and tomato on the bottom, onion slice between the 2 patties and nothing but cheese on top, works out well...
I work in the meat department at a local grocery store. 73/27 is the cheapest hamburger 80/20 is next, and actually sells the best 85/15 comes 2 ways, regular hamburger, and Angus hamburger Then there's 90/10 which is sirloin Then 93/7 which is lean ground beef, And finally 96/4 which is Extra lean
Larry, we don't have bison in Australia, but we do have buffalo, sometimes bred, and more often hunted in the North of the country which is tropical in climate. These are asian buffalo, imported many years ago, as camels were, and are now very numerous. It is wonderful meat, that can be obtained from time to time in the Southern parts of the country. Camel too.
example: my best friend preferred to coat his burgers with a maple syrup glaze. I didn't get it at first but after a separate BBQ later I tried it just to see what it was like and said to myself "huh, son of a bitch was right" basic synopsis: don't knock it until you've tried it.
Loved your video brother ! My little rant is you were right on many points, thickness. heat. flipping and toasting the bun. I do want to point out that just as the meat to bun ratio is what helps make a good burger great. When you actually eat it hold it upside down so when you bite into it you go thru the meat before all the toppings. This makes each bite taste beefier and burgers fall apart worse when you put the toppings on the bottom. :)
You're doing it wrong. Cold toppings should always be BELOW the burger. Heat rises. Flipping it upside down violates this principle. Lettuce should always be used to separate tomato from bun.
My mom used to say I was wasting food if I put something she didn't like. One day my sister heard her say it (she's 15 years older than me) told momma "if she's eating it she's not wasting it". I personally only put mustard and onions on a hotdog, if I have a chilli dog only chilli and onions. However if I see other people doing something else, I just think to each his own.
Larry as always thank you for an entertaining video. Everything that you said rings true. I think the biggest take away that I got from you was the KISS Concept. And no, I'm not talking about another release from my old high school rock and roll band.! Less is more always makes sense, especially in cooking... As far as the amount of time that it took you to make this RUclips video, I totally understand. I did a radio program in the 90s back home in Maryland. It was a five day week show that ran from 11:30 until noon, Monday through Friday. The listeners thought it was a live show and a half hour long. The reality is it was only 20 minutes of programming that was prerecorded on a Saturday. But by the time they dropped in the commercials and the announcers breaks, it became a full 30 minute program. The other thing is to do those five 20 minute shows took us an entire day on a Saturday, or in other words about an hour and a half of time in the studio per 20 minutes of actual recorded content and that doesn't include the preparation time and the scripting and all of the other crap that you have to do. Sup Larry, I agree with almost everything said, and about adding filler to ground meat is a loaf, flip meat as many times as need ect.. burgers are my jam, the only things I add to ground meat is fat, all my burgers even chicken are atleast about 80/20, agree about boasting chefs, I only comment I'm a chef because of what made me a chef, loosing late wife, kids with sister, homeless, worked my way back, got kids, home, now grandkids, and am now a chef. That's why love this channel 👍, tyvm tc 🍔🥩🍲🍺 PS, id eat almost any burger, I draw line at hockey puck🤣😂
What a great video. I do add mustard to mine. If you want bison and have a Trader Joe's near by they have frozen bison patties, and they are good. Keep going.
Thank you for the burger tips! My parents didn't like hamburgers, so we ate a lot of salmon patties and fish sticks. I make my burgers plain, no added ingredients except salt and pepper, served on garlic buttered slices of toasted white bread, with yellow mustard only. My first attempts at making burgers resulted in beef flavored hockey pucks! They were a bit chewy, but still delicious.

The whole thing about how to do something related to cooking anything and what’s right and wrong and negative comments really turns me off to commenting on any video. People are way too hung up on criticism and the only thing that is eventually going to happen is that people who make videos will stop bothering to make them, or, disabling comments.
I enjoyed this video but as far as "What are we eating" series goes, I personally don't think a long video will hurt. You have a voice for radio. Lol while I'm only joking, its still true plus that series is your bread and butter, right? If you want to get in more depth or sample more foods, for example, it wouldn't turn me off at all.
Just a quick heads up for anyone out there. Buy some buffalo meat, it’s also called bison. It can typically be purchased at your local grocery store. Just be sure to talk to either the grocery store manager or the meat counter manager and see if they can order it for you? Bison meat is extremely low in fat, which I believe is very good for those people who are on low-fat or restricted diet. Like those people who’ve had heart replacements, buffalo meat is definitely good meat. It’s extremely lean and has a slightly different taste than burgers from cows. I would definitely try to check some out when you’re grilling. Enjoy your day the Wolfepit way! Stay safe everyone… and happy eatings!
If you can prepare decent food in a way you can palate that won't harm you, going good. Anything beyond that is bonus. Agree on most points re: burgers .... keep it simple, cook'em slow, flip several times. People have often remarked that my burgers are "amazing", and my big secret is .... cooking at 350° or so, and not burning the hell out of them. That's it! Just take a little time!

If I have barbecue hot dogs I do add ketchup and mustard. (Plus onions). Seen a lot of new York hot dog videos with ketchup and mustard in a nice Crisscross pattern. I am not so fancy, just add ketchup and a varying amount of mustard depending on heat, English, Dijon or American style have widely different hear profiles. Let alone Japanese.

I think the oil was to help with how lean the ground was to add more fat to help with the searing.

Loved your video brother ! My little rant is you were right on many points, thickness. heat. flipping and toasting the bun. I do want to point out that just as the meat to bun ratio is what helps make a good burger great. When you actually eat it hold it upside down so when you bite into it you go thru the meat before all the toppings. This makes each bite taste beefier and burgers fall apart worse when you put the toppings on the bottom. :)
You're doing it wrong. Cold toppings should always be BELOW the burger. Heat rises. Flipping it upside down violates this principle.
Lettuce should always be used to separate tomato from bun.

My mom used to say I was wasting food if I put something she didn't like. One day my sister heard her say it (she's 15 years older than me) told momma "if she's eating it she's not wasting it". I personally only put mustard and onions on a hotdog, if I have a chilli dog only chilli and onions. However if I see other people doing something else, I just think to each his own.
Larry as always thank you for an entertaining video. Everything that you said rings true. I think the biggest take away that I got from you was the KISS Concept. And no, I'm not talking about another release from my old high school rock and roll band.! Less is more always makes sense, especially in cooking... As far as the amount of time that it took you to make this RUclips video, I totally understand. I did a radio program in the 90s back home in Maryland. It was a five day week show that ran from 11:30 until noon, Monday through Friday. The listeners thought it was a live show and a half hour long. The reality is it was only 20 minutes of programming that was prerecorded on a Saturday. But by the time they dropped in the commercials and the announcers breaks, it became a full 30 minute program. The other thing is to do those five 20 minute shows took us an entire day on a Saturday, or in other words about an hour and a half of time in the studio per 20 minutes of actual recorded content and that doesn't include the preparation time and the scripting and all of the other crap that you have to do. Sup Larry, I agree with almost everything said, and about adding filler to ground meat is a loaf, flip meat as many times as need ect.. burgers are my jam, the only things I add to ground meat is fat, all my burgers even chicken are atleast about 80/20, agree about boasting chefs, I only comment I'm a chef because of what made me a chef, loosing late wife, kids with sister, homeless, worked my way back, got kids, home, now grandkids, and am now a chef. What a great video. I do add mustard to mine. If you want bison and have a Trader Joe's near by they have frozen bison patties, and they are good. Keep going.
Thank you for the burger tips! My parents didn't like hamburgers, so we ate a lot of salmon patties and fish sticks. I make my burgers plain, no added ingredients except salt and pepper, served on garlic buttered slices of toasted white bread, with yellow mustard only. My first attempts at making burgers resulted in beef flavored hockey pucks! They were a bit chewy, but still delicious.

The whole thing about how to do something related to cooking anything and what’s right and wrong and negative comments really turns me off to commenting on any video. People are way too hung up on criticism and the only thing that is eventually going to happen is that people who make videos will stop bothering to make them, or, disabling comments.
I enjoyed this video but as far as "What are we eating" series goes, I personally don't think a long video will hurt. You have a voice for radio. Lol while I'm only joking, its still true plus that series is your bread and butter, right? If you want to get in more depth or sample more foods, for example, it wouldn't turn me off at all.
Just a quick heads up for anyone out there. Buy some buffalo meat, it’s also called bison. It can typically be purchased at your local grocery store. Just be sure to talk to either the grocery store manager or the meat counter manager and see if they can order it for you? Bison meat is extremely low in fat, which I believe is very good for those people who are on low-fat or restricted diet. Like those people who’ve had heart replacements, buffalo meat is definitely good meat. It’s extremely lean and has a slightly different taste than burgers from cows. I would definitely try to check some out when you’re grilling. Enjoy your day the Wolfepit way! Stay safe everyone… and happy eatings!

If you can prepare decent food in a way you can palate that won't harm you, going good. Anything beyond that is bonus.
Agree on most points re: burgers .... keep it simple, cook'em slow, flip several times.
People have often remarked that my burgers are "amazing", and my big secret is .... cooking at 350° or so, and not burning the hell out of them. That's it! Just take a little time!

I'd suggest to not add pepper or any other dried spice before cooking. It will just burn if it gets too hot. Adding it afterwards is the way to go.

I died laughing at this one, I have a feeling we'd all get along just fine LOL. And depending on the burger, it's beneficial to eat it upside down :) It has something to do with the juices and the bun... coz the top bun is usually fatter/thicker. Burger looked great Larry.
FWIW, ATK (America's Test Kitchen) _often_ flips meat multiple times to achieve even cooking. Their rule seems to be "every two minutes."
If I have barbecue hot dogs I do add ketchup and mustard. (Plus onions).
Seen a lot of new York hot dog videos with ketchup and mustard in a nice Crisscross pattern. I am not so fancy, just add ketchup and a varying amount of mustard depending on heat, English, Dijon or American style have widely different hear profiles. Let alone Japanese.
